Here's a delicious Daily Dozen inspired recipe to try this week, Potato Taquitos! Recipe from Angela (@angelagranavarela), our Spanish Social Media and Program Coordinator @nutritionfactsespanol

Ingredient suggestions for the meal: sweet potatoes, onions, garlic, paprika, turmeric, black pepper, onion powder, chili powder, cooked beans of choice, 100% whole grain or corn tortillas, raw cashews, water, lemon, and avocado.

Method:
1. Boil and mash the potatoes and carrots. Add a splash of unsweetened soy milk or water for a softer consistency if desired.
2. Cook the onion and garlic in a pan until softened, then add the cooked beans and the spices (to taste) and cook for a few minutes.
3. Assemble: place a small amount of the mashed potato & carrot mixture and the bean & veggie mix in the tortilla, and roll tightly. They should be quite thin.
4. Toast: in a pan, toast up the taquitos.
5. Sauce: blend cashews, water and lemon juice to make a nice sauce to top or dip the taquitos. Optional to also top with diced avocado.

I was feeling refreshed after completing my first FTP test in a far too long of a time lol 295w for 20min at 74kg.

I'm not too far off from where I thought I was but its a heck of a long way from my past 335w for 20min @ 65kg or my old super tough workouts of 400w for 9x 3min @ 62kg.

It does however feel good to train with objectivity and know where I'm at at this point. You don't know where you're going until you know where you've been.

I'm not making any promises for the coming months but I'm looking forward to a possible adventure in August 2021 which is a 500km gravel race through the Canadian Rockies with a good friend. Adventure in endurance is when I feel and do my best.

The big question is whether sleep deprivation from raising a baby in the first few months is the same amount of fatigue as cycling 300+kms a day on 4.5hrs sleep/night for 20 days. I may be nieve to most people but I'm pretty sure it'll be nothing to stress about. I think that'll have an affect on my training this summer though. Fingers crossed!
