Week 1 of 12 🫔

Starting my boyfriend’s Matthew | Bodybuilding & Lifestyle Coach 12 week summer program and apparently I’ve decided this is my personality now.

1,750 calories + 120g protein a day.

Breakfast: bacon & egg frittata with cheese and caramelised onion chutney
Lunch: risoni salad with steak, feta and lots of veg
Dinner: miso honey salmon + prawns with rice, pineapple and broccoli
Snacks: kiwi fruit, popcorn, Curly Wurly + obviously a large skinny cap every single day

Training wise, I’m aiming for 2 gym sessions, 2 runs, plus all my dance teaching.

Yes, she’s a runner again.

Also, is anyone else doing something like this right now? Because I need accountability buddies. There is absolutely no chance I’m getting through 12 weeks without help šŸ˜‚

Shoutout to my boyfriend for being my coach. Love you. Sorry in advance for the whinging.

Let me know if you are interest in the recipes!

Easy high-protein slow cooker satay chicken, made once and turned into two different lunches because I absolutely refuse to eat the same thing every day šŸ˜‚

Serves 8

1.2kg chicken thighs
120g brown onion
350ml salt-reduced chicken stock
30g Mingle satay recipe base Mingle Seasoning e
100g crunchy peanut butter
12g cornflour + water
100g coconut cream

Add the chicken, onion, stock, satay base and peanut butter to the slow cooker.

Cook on HIGH for 3 hours or LOW for 6 hours.

For the final 30 minutes, mix the cornflour with a little water and stir it through to thicken. Once it’s done, stir through the coconut cream at the end so it doesn’t split.

Per serve: approx. 303 calories | 32g protein

I used the same satay chicken for two completely different lunches, because meal prep is great, but eating the same meal five days in a row is not for me šŸ˜‚

Save this for your next meal prep or send it to your equally fussy friend

It’s funny the things we’ll do because we’re convinced they’re going to make us happier.

I spent years trying to be liked. Be endlessly available. Make myself easier to digest. Bent over backwards for people who didn’t care anyway.

Then eventually realise the thing we were chasing was never really in our control anyway.

Very efficient use of time šŸ˜‚

i’m 39 and i’m not afraid to admit that: that I’m too scared to let people in.

People think that I know what I’m doing and that I’m confident, that I’m sure of myself.

But they don’t see the self doubt. They don’t see the anxiety riddled parts of me.

Sometimes it feels like a puzzle where every single piece is exactly the same size and color.

I’m left scrounging, trying to put this puzzle together, and really I have no clue.

I thought that if people knew this about me, they would think I’m a fraud that every compliment I have received would be ripped away, that I would be alone.

For a long time I let anxiety take control.

I felt the need to control everything around me because I didn’t have faith in myself, I didn’t believe I would figure it out.

But I’ve learned that I actually don’t need all the answers.I don’t need to know or understand everything.

I just need to believe that I can figure it out.

And somehow I’ll make it work.

And lately not knowing doesn’t feel like the burden it once was.

If I look at all the evidence throughout my life, no matter what has happened, I figured it out.

So yeah, I don’t have all the answers

But I have faith that I can figure it out.

And if you’re reading this thinking, thank f**k, me too, good, because I cannot be the only person who looks far more certain from the outside than I feel on the inside.

i’m not perfect. Just learning and growing bit by bit.

If you’ve been staring at the same chicken and rice wondering how the hell you’re going to eat it again, save these for your next meal prep.

🄩 Birria tacos
🄩 Korean BBQ beef
🄩 Brown onion pulled beef
šŸ— Marry me chicken

They’re simple, high protein and made to be used more than one way. Throw them into a rice bowl, noodle bowl, salad, loaded potato, tacos, wraps… whatever works.

And because good meal prep ideas are meant to be stolen šŸ˜‚ send this to the person who is ALWAYS asking you what they should make for dinner.

All four recipes are from my Practical High Protein Cookbook, along with heaps more slow cooker recipes, meal ideas, high-protein swaps and simple nutrition guidance.

Cookbook is linked in my bio šŸ¤
