Back in April I wrote about how this time is a perfect time to learn about ourselves. A perfect time to realise how strong and adaptable we are.

I'm sure none of us expected to still be going through this now, in September. But I'm also sure that if someone ever explained to us back then what our situation would be like now we would've said 'Yeahh no way, I'd be crazy, I can't do it.'

But here we all are, being strong and being adaptable, and not yet crazy 🙌

Like with anything, when you're thrown into a situation we are forced to adapt & learn how to survive the situation. Don't ever forget this amazing trait about yourself.

Don't ever forget the many situations you came out the other end...surviving and stronger.

Something fresh on this gorgeous sunny day?!

YES PLEASE

Current fave.
The very simple Tuna and Slaw salad with sesame oil 🤤

One great way to control how you feel is with what you feed yourself. Feed yourself the good stuff and watch yourself feel great 😍

Pumpkin and Cauliflower Lamb Pie.

This one actually turned out super tasty...I was surprised 😅

6️⃣ simple steps 🤤
1- Roast Pumpkin (seasoned with cinammon) till soft.
2- Boil Cauliflower (seasoned with salt) till soft.
3- While veggies are cooking, sautee some red onion and cumin seeds.
4- Cook till onion is transluscent and fragrant, and then add mince. Taste and season. Once cooked, transfer to a baking tray.
5- Once pumpkin and cauliflower is cooked, puree with a stick blender till smooth. You can add a small amount of butter to make smoother. Make sure to keep tasting and seasoning with salt and pepper to your desired taste.
6- Transfer puree to the top of mince mixture and place in oven for about 15mins or till golden.

This one didn't take long at all and it's a great way to get the kids to eat some veggies without knowing 🙌😏

Keeping the body and mind strong during these crazy times.

Todays cardio workout:
1 x lap of the oval
50 star jumps
10 squat jumps
1min rest

x5 rounds.

It felt so great to get this done. So if ever during this time you're feeling down or overwhelmed, get your body moving. You won't regret it 🙌🥰

'Change is constant, so it's up to us to be adaptable.'

Excuses can easily fill our brain when we're scared to do something.

Too old
Too hard
I have kids
I have no time
I don't like this
I don't like that

We've heard them all.
And I'm sure we've said them all.

I've been working with Carmen since end of last year and there has never been one excuse.
Through life's craziness she has made it work and continues to make it.

The last 12 weeks we took an extra step in her transformation and incorporated nutrition.
If there was any time for an excuse, it would've been now...during a global pandemic 🙄
But nope, nothing.

In 3 short months she was able to drop 5kg, 40cm from her entire body and 6% body fat.

I'm glad she never filled her head with none of those nonsense excuses because than she wouldn't be feeling as amazing as she does now!

What will make you stop making excuses?

Currently one of my favourite meals!
Zoodles with lamb mince and mixed vegetables sauce.

Super simple and soooo delicious 🤤

1️⃣ Turn on oven to 180deg.
In a tray place roughly cut red capsicum, tomato, pumpkin, zucchini, mushroom and red onion.
Drizzle with some olive oil, rosemary and chives.
Cook and then blend till smooth consistency.

2️⃣ Cook lamb mince in pan with some garlic, red onion, salt and pepper.

3️⃣ Make zoodles. (I used a mandoline slicer with the 'julienne' setting.
Cook in microwave for 1 min.

Combine and enjoy 😌

It's as simple as 1,2,3.
