Not so much fitness related, however I feel like this is a good mention for what encompasses overall health 🧠

Like most, i enjoy goal setting (something that is particularly popular this time of year) and I think every year I set goal to do more and also read more. I usually fail once my uni term begins and all I get to do is read (just not the recreational kind) and get overwhelmed with the pace of life, work and school.

Covid taught me many things, one of the biggest and most valuable things was I learnt more about time. How precious it is, how to spend it wisely and what I want to do with my own quantity of it. Up until that point of my life I didn’t realise how much I had tunnelled myself into a never ending hole of more = success. Each year I found myself having to do more and the return resulted in a decrease of spare time and loss of enjoyment of activities in particular doing sweet f*** all (and enjoying a good book) without feeling guilty.

I’ve spent a lot of last year restructuring my life to allow me to do less but therefore increase my enjoyment of my time. I started this book 24 hours ago, and could not put it down. I read it before and after uni, and finished it this morning before work. It is a lovely story of a young woman who has an ABI (acquired brain injury) and loses her entire identity, it is simple, it is beautiful and moving and I highly recommend reading it (if reading tickles your fancy). šŸ¤“

Nuts about you 🤪
For a while I steered clear of nuts because of its high fat content. The risk (fear of weight gain) didn’t outweigh the reward (an abundance of health benefits). How silly am I?! šŸ˜‚
Nuts are fantastic for a number of reasons;

Rich in essential vitamins:
* Vitamin E: 12% of the RDI
* Magnesium: 16% of the RDI
* Phosphorus: 13% of the RDI
* Copper: 23% of the RDI
* Manganese: 26% of the RDI
* Selenium: 56% of the RDI

And antioxidants:

Antioxidants, including the polyphenols in nuts, can combat oxidative stress by neutralizing free radicals — unstable molecules that may cause cell damage and increase disease risk.
One study found that walnuts have a greater capacity to fight free radicals than fish.

Nuts have impressive effects on cholesterol and triglyceride levels. In one 12-week study in obese people, those eating pistachios had triglyceride levels nearly 33% lower than in the control group.

As long as you eat them in moderation, nuts make for a tasty addition to a healthy, well balanced diet.

My last session slogging it out with this legend šŸ’ŖšŸ¼
Recently I made the decision to step away from in person PT to focus on finishing my degree and putting my energy into some personal projects.

It’s been a crazy 5 years, managing my own business has taught me so much about myself, other people, and valuable life skills I will get to keep with me for life.

My clients become my family and we grow together, overcome hurdles and share special milestones in life together.

Whilst this moment comes at a very strange point of time for the fitness world, I still wanted to take the time to recognise each and every client (past and present) and extend a thank you from the bottom of my heart.

You’ll still catch me on here because my love or fitness isn’t stopping, and rest assured I’ll be back ā˜ŗļø
In the mean time, I still offer nutrition coaching and online programming and coaching services. šŸ™ŒšŸ¼

Not necessarily the ā€œprettiestā€ of my creations but i made a healthy vegan big breakfast this morning consisting of baked beans, smashed avo on sour dough, homemade hash browns, tofu scramble and sautĆ©d vegetables. Easy to whip together, super healthy and a quarter of the price of a cafe breakfast šŸ³ 🄰

Lazy sundays includes gormet breakfasts šŸ‘©šŸ»ā€šŸ³ā
āœ–ļøFRENCH TOASTāœ–ļøā
ā—¾Ingredients◾
2 x slices of bread (i used sour dough)
1 tsp chia seeds
1 tbsp agave nectar or maple syrup
100ml almond milk
1 tsp cinnamon
1 tsp vanilla extract
ā—¾Method ◾
Mix all ingredients except the bread in a large, shallow bowl. Place in the fridge to activate for 10-20 minutes.
Preheat griddle to medium heat (~350 degrees F / 176 C) and grease with 1 Tbsp vegan butter or coconut oil.
Dip each slice of bread in the batter for about 20 seconds on each side. If your bread is dry, leave it in a little longer. If you’re using sandwich bread, it should only need 25-30 seconds total to soak.
Place on griddle and cook until golden brown on the underside. Carefully flip and cook until the other side is golden brown as well – 3-4 minutes.

Top with desired toppings: I went with berries, banana and maple syrup.
