Luna has been a water baby from the moment she stuck her toes in the pool at two weeks old. Ok maybe not exactly but she has always enjoyed water. She is two now and continues to amaze (and sometimes scare) me with her love of water. Here are five things we did in year one. Make sure to follow for part ✌🏻.

1. Made bath time more comfy from the start. 🛁 I bathed and showered with newborn Luna. We did skin to skin so she wasn’t cold. When she was tiny, I put a washcloth between us to make her less slippery. Once she could sit up, she bathed with big sis, which included toys, playtime and splashing. 

2. Got her eyes wet. 👁️ We didn’t stop water from getting on her face as a newborn. As she grew, we didn’t stop her from being splashed in the tub and pool. We dump water over her head in the bath. 

3. Brought her into the water young. 🌊 As soon as she was old enough, she was in the pool, lake, water park, ocean and river. I am grateful we live in a place where we could show her a variety of water experiences. 

4. Practiced going under water in the pool by giving her the same verbal cue each time — “1,2,3 GO!” 🐟 We started this before she turned one. The cue was important so she would know what to expect and could prepare. I’ll share more about this in part two. 

5. Stay chill. 😎 If she went under water unexpectedly, we remained calm (on the outside at least). Just like other aspects of parenting, babies can sense our vibes. If we panic, they panic.

All of this to say, each baby is different and some just love the water more. 🐬Luna is now 26 months and pretty fearless around the water. By next summer she may be more cautious. Will report back!

Chicken and Potato Croquettes 

Servings: 12-15

Ingredients:

1 lb boneless, skinless chicken breast, boiled and shredded
4 large potatoes, boiled and shredded
1/2 cup carrots, finely diced and boiled
1/2 cup bell pepper, finely chopped
1 cup mozzarella cheese, shredded
1 large egg
3 tbsp cornstarch
Salt, to taste
1 tbsp black pepper
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp chicken powder
2-3 Serrano peppers, finely chopped
1 tbsp fresh parsley, chopped
Oil, for frying

Coating:

1 cup bread crumbs
1/2 cup all-purpose flour + 1/3 cup water (to make thick slurry)

Instructions:

Boil large size potatoes for 15-20 min. Check with fork/knife; it should slide in easily, Use high-starch potatoes (Russet, Idaho). Drain, cool slightly, then shred.)

In a large bowl, combine potatoes, chicken, carrots, Serrano peppers, bell peppers, egg, cornstarch, salt, pepper, garlic powder, onion powder, chicken powder, and cheese. Mix until well combined and sticky.

In a separate bowl, mix flour and water to form a thick paste.

In another bowl, add bread crumbs.

Shape potato-chicken mixture into round croquettes.

Coat croquettes in: Flour mixture then the Bread crumbs

*Choose cooking method:
 - Freeze for later use.
 - Or heat oil in a pan once the oil is hot turn the heat to medium. Drop in the croquettes and Fry for 2-3 minutes flipping sides or until golden brown and crispy. Do not over crowd the pan.
 - If Air frying,  lightly spray the croquettes with cooking oil and Air fry at 400°F (200°C) for 10 minutes, flipping halfway.

Tips and Variations:

- Freeze croquettes for up to 2 months.
- Adjust Serrano pepper quantity to desired spiciness.
- Experiment with different cheese combinations.
