And so much more, that only left me fatter and with more gut health issues than I care to recount, I can tell you with 1000% certainty that fueling for muscle and longevity is where it’s at!

I had loaded potatoes for the first time in Amsterdam and have loved how easy, versatile and nutritious they are.

I like this Mexican version on purple sweet potatoes. Simply roast the potatoes and top them with this salad! It is fibre, vitamins, minerals and antioxidants on steroids

Enjoy!

Black Bean & Corn Mexican Salad

Ingredients:
1 can Black Beans
1 can of Corn
1/2 Red Pepper
1 small Red Onion
1 handful fresh Cilantro
Juice of half a Lemon/Lime
1 Tbsp of Olive Oil
Salt & Pepper to taste

Directions:
1. Finely chop red onion and place in a bowl with lemon/lime juice with a pinch of salt, let stand
2. Chop red pepper and cilantro
3. Drain and rinse beans
4. Drain corn
5. Mix all into the onion mixture and add olive oil, salt and pepper to taste

Listen up, ladies! If you’re not training with weights, you’re leaving precious gains on the table. Only cardio is leaving you exhausted and jiggly.

You see, as estrogen declines during perimenopause and menopause, strength training helps stabilize hormones—reducing hot flashes, mood swings, and energy lows.

Estrogen maintains muscle fibres, especially Type II fibres that keep you strong. Lifting weights can help raise testosterone levels, promoting lean muscle growth and increased strength. Hormones such as estrogen, progesterone, testosterone, growth hormone, insulin, and cortisol influence muscle building, recovery, and fat burning. Regular resistance training helps balance estrogen and progesterone levels, enhancing energy, metabolism, and overall well-being.

Your body isn’t resisting; it’s asking for more strength. Grab those weights—your hormones will thank you!🌱💪🏽

Carbs are not the enemy, and pasta can be a part of a healthy diet; you just need to pair it with the right ingredients. This particular is high in protein - 17g per 85g of pasta - and rich in fibre, which helps to blunt blood sugar spikes.

By incorporating extra vegetables, healthy fats, and protein into the sauce, it will all go a long way to reducing the blood sugar spike you would typically experience with naked carbs.

The sauce I used here is an example of how easily you can add more veggies.

Here’s how 👇🏽

Ingredients:
1 box of Catelli pasta
1 - 2 Zucchini, spiralled -zoodles
20 Asparagus spears (woody bottoms removed)
1/4 c of veggie stock
1 large clove of garlic, minced
1 tbsp of olive oil
Salt

Directions:
1. Boil water to cook pasta.
2. Once boiling, add a tablespoon of salt to the water.
3. Add asparagus and blanch for 5 minutes.
4. Remove the asparagus from the water, cut the spear tips, and set aside.
5. Add pasta to the pot and cook according to the package directions.
6. While the pasta is cooking, add the asparagus and vegetable stock to a blender and blend until smooth.
7. Add olive oil and minced garlic to a pan and cook over medium heat.
8. Once the garlic is slightly brown, add the blended asparagus and a pinch of salt. Sauté for a few minutes.
9. Before draining the pasta, add the Zoodles to warm through and drain them all.
10. Mix all and the asparagus tips and serve 😋

Sixty. Stronger, healthier, and more alive than ever. 🎉✨

As I celebrate this milestone denied to many, my heart is full with gratitude and love. At 60, I’m proof that age is not the end of the story; it’s the plot twist where you step into your power.

I’m fitter than I was decades ago, fueled by plants, strength training, and a deep belief that midlife is where transformation really begins. Grateful doesn’t even begin to cover it—thankful for my resilient body, which has carried me this far, and blessed for all the love from my beautiful family and friends that I get to share this life with!

If you’ve ever thought it’s “too late” for you… Let me be living proof that it’s never too late to rewrite your story.
