Last day of holidays calls for trying out a new pancake recipe. Adapted this one from :
-1 cup oats (calls for quick oats but I am using Bob's Red Mill gluten free)
-1 cup cottage cheese
-4 eggs
-1 tbsp honey
-1/4 tsp cinnamon
-grass fed butter
-1 scoop Vanilla
*original recipe did not include protein powder so I added a bit of unsweetened Almomd milk to make sure they weren't too dry

I try my best...
Ideally, I would get at least the minimum recommended daily intake of protein from foods that I consume. Realistically, I forget the food I prep at home, underestimate how much I'll need, or can't find good options on the go. Having a quality protein that I can use on the go is essential to ensuring I'm able to keep my energy high, continue to build strong muscles and attempt to keep up with my energetic 5 year old. Bonus points that uses all natural ingredients 🌰

Today I ignored my feelings and listened to my goals. I felt like taking a rest day. I have a fitness goal this year of doing a my first running event in over 5 years. We listened to the goals instead.

Sundays are my day to set myself up for the week- get a good grocery shop in, map out meals and try and prep so during the busy week I'm not scrambling. I also love trying out new recipes. This cherry and chocolate smoothie one is on the list today:

It's funny how quickly you forget as a parent what it's like to try and operate with no sleep- still go to work, run your business, do the other things. Then the little humans get sick (multiple times) during the night...or right that's how that feels. More then the recognition of how hard and reminder of what a lot of parents continue to deal with every day, is the GRATITUDE for when it's not so fu***ng hard. When you wake up in the morning to feel the sun on your face, tighten the high pony and head out to crush the day. Let's go💪

No limits....except my lack of jumping ability 😂 Well the height I can physically jump is limited, I'm pretty proud that after 2 knee surgeries and many years of movement this body of mine can still jump.
