KUNG PAO BRUSSELS SPROUTS🌶 🌱

If you’re looking for a different way to enjoy them, or aren’t a fan just yet, give this recipe a shot. Crispy, zingy and perfectly tender every time. An easy recipe that’s ready in 20 mins👌

Ingredients
🌱500g Brussels sprouts
🌱1 clove of garlic, minced
🌱3 tbsp. soy sauce or tamarind
🌱1 tbsp. rice vinegar
🌱1 tbsp. sriracha sauce
🌱1 tsp. sesame oil
🌱sliced red peppers & sesame seeds (optional)

Method:
1️⃣ Bring a pot of salted water to boil whilst you prep the Brussels sprouts. To do this, simply cut off the stem of each Brussels sprout, slice in half (lengthwise) and remove the loose outer leaves with your fingers.
2️⃣ Blanch the Brussels sprouts for 2 minutes and then let them cool in a colander for 3-5 minutes. At this time, heat your pan over medium-high heat.
3️⃣ Prep the Kung Pao sauce by mixing together the soy sauce, rice vinegar, sriracha, sesame oil and garlic in a jar or small bowl.
4️⃣ Place the Brussels sprouts cut-side down in the pan. Let them cook for approx. 5 minutes and then flip them over and cook for approx. 3 minutes.
5️⃣ Now pour the Kung Pao sauce over the Brussels sprouts and cook for another 3 minutes, whilst occasionally tossing the Brussels Sprouts around so they are evenly coated.
6️⃣ Enjoy straight off the pan with sliced red peppers and sesame seeds over the top as garnish!

SAUTÉED GARLIC ASPARAGUS🤤🌱

A go-to option for me whenever I feel like a healthy and fresh side to compliment my mains. Doesn’t require a whole lot of ingredients and is really quick at just 10 minutes from prep to plate 👌

If you haven’t been a fan of asparagus in the past, be sure to give this recipe a try! You won’t regret it 😁

Ingredients
🌱250g green asparagus
🌱1 clove of garlic, minced
🌱1 tbsp. vegan butter/margarine
🌱1 tsp. olive oil
🌱1 tbsp. almond flakes (optional)
🌱salt & pepper to taste

Method:
1️⃣ Cut off the woody stems of the asparagus and blanch them in salt water for only 1 minute.
2️⃣ Then place in a skillet over medium-high heat (just by themselves) and cook on each side for approx. 3 minutes, or until the skins become slightly charred.
3️⃣ Now add in the olive oil, vegan butter/margarine, garlic, almond flakes and S&P and continue to cook for an additional 2 minutes. Make sure to continually toss together so the asparagus is evenly coated.
4️⃣ Serve up and enjoy!

Vegan Nacho Cheese🫕

This tasty, stretchy nacho cheese works as a nice healthy arvo snack, or as the cheesy base for countless dishes.

I have this at least once a week as it’s so simple and quick to whip up at just 10 minutes. So next time your craving cheese, get your NutriBullet out and give this vegan alternative a try! 😋

Ingredients
🌱cashews
🌱carrot
🌱 tapioca starch
🌱onion powder, garlic powder, paprika & salt
🌱nutritional yeast
🌱lemon juice
🌱 white miso paste & jalapeños

Vegan Penne Alla Vodka🍝 🌱

After hearing so much about the creamy vodka pasta, I couldn’t resist veganizing it myself. I also opted for a rigatoni over the traditional penne as it holds more creamy sauce inside of it (which is what we want, right?).

Ingredients:
🌱 Penne or rigatoni
🌱 onion, garlic and olive oil
🌱 tomato purée
🌱 vodka
🌱 plant based cream (I use the ) single cream. It’s the 💣) and plant based milk
🌱 nutritional yeast and S&P
🌱 red chilli peppers (if you’re a dare devil) and fresh basil

New version of my Cleansing Cucumber Pineapple Juice 🥒 🍍

Hope everyone is having a great weekend out there!☀️

We all need a lil detox on the weekend every now and then. So, with summer around the corner, this means it’s time to have this cleansing juice again 😊

Ingredients:
🌱 1 Medium sized pineapple
🌱 1/2 medium sized cucumber
🌱 1 tsp. flax seeds
🌱 1/2 lemon
🌱 1 1/2 cups water
🌱 2 slices of ginger

Sautéed Brussels Sprouts with vegan bacon & walnuts🤤 🌱

Almost time for the weekend. You know what that means, right? Time to make Brussels sprouts!

Ok, maybe that’s just me!🎉 But for real, if you’ve never been a fan of Brussels sprouts, you should try this recipe out. Or if you’re already a fan, you should also try this recipe out 😂

They come out crispy and caramelised whilst retaining a nice tender texture. They taste amazing combined with salty vegan bacon, crunchy walnuts and zesty lemon juice. You’ll be shocked just how good Brussels sprouts can be!🤯

Black Bean Dip 😋 🌱

It’s very smooth and creamy for a dip without any plant based cream or oil! Easy to whip up in just 5 minutes and a handful of seasonings with your food processor or Nutribullet. Also low in calories and high in protein 💪🏽

Great to enjoy as a dip, or as a filling for your tacos, burritos or enchiladas (or any Mexican dish really 🇲🇽 ).

Vegan Creamed Spinach and Mushrooms🤤🥬🍄

If you’re as obsessed with mushrooms as I am, you gotta give this dish a try. Plus, who doesn’t love a cream sauce over fluffy basmati rice?😋 Fairly simple recipe and only takes 25 mins to whip up!

Ingredients
🌱Brown mushrooms
🌱Baby spinach
🌱Plant based cream & milk
🌱Nutritional yeast
🌱Garlic powder
🌱Cayenne pepper
🌱Optional: Mock meat/tofu strips (I used “no beef” strips and they absolutely bang in this dish!)
