Flour Tortillas
Ingredients
• All-purpose flour – 2 cups
• Baking powder – 1 tsp
• Salt – ½ tsp
• Vegetable oil or lard – 3 tbsp
• Warm water – ¾ cup
Method
1. Mix flour, baking powder, and salt.
2. Add oil and mix until crumbly.
3. Gradually add warm water to form soft dough.
4. Knead 5 minutes.
5. Rest dough 20 minutes.
6. Divide into small balls and roll thin.
7. Cook in hot skillet 30–40 seconds each side.
Used for tacos, burritos, wraps
Pita Bread
Ingredients
• Bread flour – 3 cups
• Warm water – 1¼ cups
• Olive oil – 1 tbsp
• Sugar – 1 tsp
• Instant yeast – 2 tsp
• Salt – 1 tsp
Method
1. Mix warm water, sugar, and yeast.
2. Add flour, olive oil, and salt.
3. Knead 8–10 minutes.
4. Let dough rise 1 hour.
5. Divide and roll into circles.
6. Bake 230°C (450°F) for 5–7 minutes.
Creates pocket bread
Garlic Naan Bread
Ingredients
• All-purpose flour – 2½ cups
• Yogurt – ½ cup
• Warm milk – ¾ cup
• Sugar – 1 tsp
• Instant yeast – 1½ tsp
• Salt – 1 tsp
• Butter – 2 tbsp
Topping
• Garlic – 3 cloves (minced)
• Butter – 2 tbsp
• Cilantro – 1 tbsp
Method
1. Mix milk, sugar, and yeast.
2. Add flour, yogurt, salt, and butter.
3. Knead 8 minutes.
4. Let rise 1 hour.
5. Roll oval shapes.
6. Cook on hot pan or tandoor.
7. Brush with garlic butter and cilantro.
Flavor: soft garlic flatbread
Cheese Stuffed Naan
Ingredients
• Naan dough – 1 batch
• Mozzarella cheese – 1 cup (shredded)
• Butter – 2 tbsp
• Garlic – 2 cloves
Method
1. Divide naan dough into balls.
2. Flatten and add cheese filling.
3. Seal and roll gently.
4. Cook on hot skillet until golden.
5. Brush with garlic butter.
Texture: soft bread with melted cheese inside
Chef Tip:
For restaurant-style naan, cook bread on very high heat so it forms bubbles and char spots.
