Vegetarian potato salad
New potatoes
Pesto
Cucumber
Vegetarian cheese
Mushrooms
Mixed salad
Thyme
Sea salted nuts and raisins
Olive oil
Butter
Method.
Boil or use a microwave bag to cook the potatoes.
Add butter and olive oil and some salt and pepper to a hot pan and fry the mushrooms on a high heat. Reduce to a medium heat and add the nuts and raisins and the potatoes. Remove from the pan and allow to cool.
Meanwhile cut the cucumber and finely chop the thyme. Add the mixed salad leaves.
Add 2 tbsp of the pesto and some olive oil to taste. Stir and serve with cheese on top.

Lamb with glazed potatoes. Full video instructions.
Ingredients: lamb culotte 300-400g, fresh garlic, fresh thyme, salt and pepper, butter, mini potatoes (5x per person), cooking cream, lemon (1/2), olive oil.
Method: pre-heat the oven to 180°C. Boil the potatoes for 15 minutes, drain and leave to cool (or use a microwave potato bag if you have one for 7 minutes).
Finely chop some of the thyme and leave some as sprigs.
Squash 3 cloves of garlic, finely chopping one of them.
To season the meat: rub in the 1x finely chopped garlic, half of the finely chopped thyme and salt and pepper.
Use an ovenproof pan and place on the hob on a high heat. Add olive oil. Brown all sides of the meat well.
Add the 2x garlic and the sprigs of thyme into the pan with the meat and place in the oven for 20-25 minutes.
When finished remove the meat to a plate to rest for 10 minutes.
Remove the burnt thyme from the pan and throw it away and put the pan onto medium heat. Add one tablespoon of butter to the pan and melt. Add the potatoes and salt to taste.
Add the cooking cream to the pan and reduce. Squeeze the juice from half a lemon into the sauce. Add more of the finely chopped thyme.
Remove from the heat.
Slice the lamb into thin pieces.
To serve: place the meat on top of the potatoes. Garnish with the remaining finely chopped thyme. Pour the meat juices on top for flavour.
