Each day, we serve two to three different filter coffees. Each one selected for its individual attributes and cup quality.

The selection changes with the seasons, following the coffees we source from our partner farmers. Every coffee is dialed in individually and brewed one cup at a time.

We are getting ready to launch this season’s lots from Guatemala.

We have increased the range of coffees from our partner farm, El Socorro, and for the first time, we will feature Orange Geisha and Laurina from the farm. We also have a limited auction lot of Geisha from El Injerto, alongside two lots of Pacamara - Red and Yellow - from El Morito.

The new coffees will be ready to launch in late October.

Each week, we select one of our filter coffees to serve over ice. It’s a different expression of the coffee, but one that can be just as transparent, clear and expressive in flavour.

Whether served warm or iced, every coffee is rested for a minimum of fourteen days before we dial it in. From there, each cup is brewed individually and served tableside — giving every coffee the same attention to detail, regardless of how it’s served.

A glimpse from the past. This is a video we recorded with our partner farmer Alejo Castro at his family farm, Volcan Azul, in Costa Rica many seasons ago.

Our relationship with Alejo goes back to the very first season of April. We fell in love with coffee from his young Obata trees, and the relationship has continued to evolve ever since. Today, we purchase his SL28 and Geisha cultivars, alongside a larger farm lot of Caturra and Catuai for our little sibling, .

In fact, the idea behind SP started with Alejo. Early in our relationship, he taught us something important: if we wanted to create more meaningful value for a producer, we needed to look beyond purchasing only the smallest and most distinctive lots. We needed to find ways to buy a broader range of coffees, and ultimately more volume.

Most coffee farms produce different qualities and cultivars across a harvest. Often, a significant part of the crop comes from varieties that are more predictable and reliable to grow. Finding a place for those coffees can be just as important as celebrating the rarest lots.

That conversation became the starting point for SP. Today, we purchase SP lots from several of our partner farmers, alongside the coffees we select for April. Our long-term aim is to build this into every producer relationship where it makes sense.

The idea behind is simple. It comes from listening, learning and adapting the way we work based on real conversations with our partner farmers.

Our approach to filter coffee is specific. Every decision is made to highlight the quality, variety and origin of the coffees we work with from our partner producers.

Working with the same farmers season after season allows us to keep learning. Each harvest gives us the opportunity to refine the roast, the brewing and our understanding of the coffee in greater detail.

And the work never really stops. When one season arrives in Copenhagen, we are already discussing the next. Our partner farmers share what they are seeing at origin, and we share what we are learning from the coffees in the roastery and in the cup.

It is a continuous exchange of knowledge, with the ambition to make each season better than the last.

In our store, every cup is brewed individually. It may not be the fastest way to serve coffee, but speed was never the intention. We believe that giving each cup its own time and attention is the best way to express the work behind the coffee. One cup at a time.

• TADESSE HANKA NATURAL KRUME

For this month’s subscription, we return to Bombe, Ethiopia, and to our partner farmer Tadesse Hanka. Earlier this year, we shared his washed lot. This time, we have selected a naturally processed Krume — a different expression of the same place and variety.

The familiar sensation of stone fruit remains, but the natural process brings another dimension: deeper in flavour, richer in texture, with a lingering sweetness. One producer. One variety. Another perspective. The October Subscription Coffee ships on the first Tuesday of the month.
