It’s early deliveries before circuit closures, last-minute champagne restocks, exhausted crew, constant guest movement, and preparing for things before they’re even requested.
The difference between chaos and smooth service usually comes down to preparation… & your provisioner!
A few things every Chief Stew & Chef learns quickly during GP week:
• overstock water & ice
• prepare for guest numbers to increase
• pre-plan grab-and-go food
• keep emergency backup stock onboard
• never underestimate hydration & crew fatigue
