Don't have a dedicated dry ageing fridge so carefully keeping an eye on temp and humidity in the fridge has produced some of the best venison I have ever had. 6 weeks dry ageing is fantastic. When people tell you aging venison makes it gamey they clearly haven't tried it. Maybe this season we need a dry ageing fridge and have this on offer a bit more?
