High-Protein Chickpea PB Cookies 🍪

8.5/10 - WORTH A BITE‼️

115 cals, 7g protein each, and you genuinely can’t taste the chickpeas.

Proper cookie texture, proper peanut butter flavour, and at that number you can have two and still be well on track for your fat loss week.

Full Recipe (Makes 6 cookies)

* Chickpeas (rinsed, drained and patted dry) - 125g / 3/4 cup
* Creamy peanut butter - 45g / 3 tbsp
* Vanilla whey protein - 30g / 1 scoop
* Honey (or maple syrup) - 20g / 1 tbsp
* Vanilla extract - 1/2 tsp
* Bicarbonate of soda - 1 small pinch (just under 1/8 tsp)
* Salt - 1 pinch
* Milk - 1–2 tbsp (only if needed)
* Dark chocolate chips - 15g / 1 tbsp

Method:
1. Preheat oven to 175°C / 350°F and line a tray with parchment.
2. Blend the chickpeas, peanut butter, honey, vanilla, bicarb and salt until smooth.
3. Add the whey and blend again. If it’s crumbly, add milk a tablespoon at a time until it’s scoopable.
4. Fold in most of the chocolate chips, keeping a few back.
5. Scoop into 6, flatten to about 1cm and press the leftover chips on top.
6. Bake for 7–9 minutes until the edges are just golden. Smaller cookies cook quicker, so keep an eye on them.
7. Leave on the tray for 10 minutes to firm up.
