Hello all 👋🏽 I haven’t posted much on insta of late, in all honesty the effort I was putting into posts etc wasn’t really yielding much and I was getting a better return on my efforts elsewhere.
I still remain no less passionate about health and fitness, so much so I’ve been fortunate enough to co-author a book titled ‘Happy Healthy Wealthy Entrepreneurs’.
We’ve only soft launched the book this week and it’s already trending in Amazon’s business and entrepreneurship lists, which is quite frankly mad!
My contribution to the book is about the ‘7 things I wish I’d know when getting started’ and is a personal account of the lessons I’ve learnt (and am learning).

Guys, I’m sure you’re smashing it whatever you’re doing, so never forget to treat yourself!!
Balance is all about creating sustainable habits, making sure you enjoy yourself and not giving yourself a hard time!
I try to eat healthy most days, but just like most of people I love a bit of fast food!!
What’s your favourite, pizza or burger & chips for a blowout?? I can’t decide to be honest, is it ok to have both....?
Remember clocks go forward tonight!! ⏰⏰⏰ One less hour of the weekend, so make the most of it, but lighter mornings and evenings are coming!!!

Thought I’d share something different today...given it was Mother’s Day, the little man and I went out on our new bike to give Mumma a little rest this morning (cue Dad pose on bike...)
We then took a trip to the local bus garage and then made Mumma a chicken pie and mash as a little comfort Sunday lunch.
It’s been an intense last month since I started a new job, and I’ve also taken on new PT clients as well other projects have kept me busy too, and whilst there’s a lot going on, reflecting on the last month I’m feeling so much positivity in every corner.
Saying all that, family are my number 1 and this weekend I’ve focused on them to get some balance back. It’s easy to get consumed by everything going on in life, but just stepping back from the noise sometimes is the best.
Got the movement in on the bike too😉🚴🏽♂️

A little personal post on . These are the most important women in my life, who I admire for their strength, resilience and patience amongst everything else. I wouldn’t have achieved half the things in my life without their love and encouragement.
I am lucky enough to have many women in my life who I admire, learn from and look up to, be they family, friends or colleagues.
We have so much to gain from embracing our diversity and differing perspectives, and I’m thankful to all the many positive female role models in my life this

This is one of my our favourite mid-week meals, it's super tasty, very simple and easy to increase the quantity to save some for lunch the next day! So, here's how you makke this Chicken & Lentil curry...
* 1 medium onion finely sliced
* 4 cloves garlic minced
* 1 red chili seeded and finely chopped
* 1tbsp curry powder
* 2tsp ground coriander
* 1tsp ground cumin
* 1tsp chili powder
* ½ tsp dried chili flakes
* 125g red lentils
* 600ml chicken stock
* 1 large tomato - roughly chopped
* 8 chicken thighs, skinless and boneless cut into bite size pieces
* 200g baby spinach
* 1tbsp coriander finely chopped
* Salt and pepper to taste
1. Heat a tsp of oil over a medium heat in a deep saucepan.
2. Add the onions, chili, and garlic and fry until the onion is translucent
3. Combine all of the dry spices and sprinkle over onions etc. Fry the spices for a couple of minutes until their aroma is released and stir in the lentils.
4. Combine well, making sure that the lentils are covered in the spices.
5. Pour over the chicken stock, stir and bring to the boil.
6. Turn down the heat, add the chopped tomato, stir and simmer for five minutes.
7. Add to the chicken, stir, cover the saucepan and cook for twenty-five minutes until the chicken is cooked through.
8. Remove the lid, add the spinach and cook gently for further twenty minutes until the chicken is tender and the sauce thickened.
9. Add the coriander before serving and season to taste.

This super easy & tasty breakfast will leave you dreaming about digging in when your morning comes around. This is one of my go to breakfasts for keeping me full up for most of the morning, which is great when things
are busy.
🫐Porridge oats – 45g
🫐Handful of frozen blueberries (50g)
🫐Handful of sultanas or raisins (30g)
🫐Handful of pumpkin seeds (15g)
🫐Handful of chia seeds (15g)
🫐1 tbsp honey
🫐Grated frozen ginger
🫐Coconut water - 150ml
1. Using a Tupperware container with a lid, mix in the oats, blueberries, sultanas & seeds.
2. Drizzle over the honey
3. Grate over the ginger
4. Pour in coconut water & mix
5. Leave in the fridge overnight & dig in come sunrise!
