PLANT BASED SCRAMBLED "EGGS"
This breakfast idea came up when I tried the vegan omelette at the Gate restaurant which was made of tofu.
Tofu contains 8g of protein per 100g and is fat and cholesterol free. Because I used to eat eggs I can compare and it is lighter and easier to digest hence with bread it won't feel too much.
βœ… organic smooth tofu from βœ… olive bread 🍞 from
βœ…olive oil
βœ… paprika powder
βœ… Cayenne powder
βœ… black pepper
βœ… tomato / yellow pepper / spring onions
➑️ using a fork, mash the tofu on the toast of your choice (mine is olive bread).
➑️ micro wave for 1.5min
➑️ add the remaining ingredients to taste on top
πŸ’šif you do not want to micro wave scramble the tofu in a pan with coconut oil

I find it hard to make kids eating beetroots so I usually blend them in smoothies hidden with banana and broccoli (believe it or not: my kids love broccoli).
Tonight I am trying a salad with beetroot carpaccio (finely sliced cooked beetroots), white grapes, cherry tomatoes and cucumber that I will season with black pepper, mustard and olive oil (as a niΓ§oise olive oil is my go to seasoning).
Look how beautiful it looks... I am sure they will not resist it ✨❀️

Trying to be good and need to much on a cake?
Here is my cupcake recipe to make you feel full and satisfied with benefits only πŸ˜‡
Ingredients:
150g ground almonds
4 tbsp of chia seeds
4 tbsp of oats
1 tbsp of coconut oil
1 handful of blueberries
1 mashed banana
1 tbsp of date syrup (optional)
2 cups of coconut milk

Soak the chia seeds in filtered water (add more water than chia seeds as they are going to absorb the water) till they form a paste (egg white like).
Mix all ingredients together with your hands and place them in individual cupcake moulds.
If the dough is too dry, add coconut milk. If it is too runny, add almond flour or oats.
Preheat and cook for 15 min at 190 degrees less or more depending on your oven.

Sometimes I want to eat something in the morning rather than drink so I make a thick creamy smoothie by adding avocado and peanut butter to my healthy mix.
Here is my today's recipe:

Something to try with Vitamix just replace sugar with coconut nectar or date syrup πŸ‘πŸ» and use coconut cream for a vegan version
