Inspired by other I thought I'd whip this up from what I had at home πŸ˜‡

The dressing makes it and I added some sauerkraut after I took the pic too πŸ‘

Cucumber
Avocado
Haricot beans (chickpea or others would work)
Edamame (from freezer so warmed with beans)
Rocket (arugula)
Sprouts
Sauerkraut

Dressing;
Hummus
Apple cider vinegar
Salt and pepper
Dijon Mustard
Pinch cumin
