It’s been some time … but I maybe be back in the saddle. Hoping to start a brand new class locally to Taunton. We are just finalising the last bit with venues . Would any of you be interested-

Slow Cooker Sweet Potato Curry

This vegan curry is the ultimate comfort food—warm, hearty, and packed with plant-based goodness. Sweet potatoes melt into a rich, flavorful sauce as they cook, combining beautifully with chickpeas and red lentils for extra protein. Whether served with rice or naan, it’s a satisfying dish that’s both healthy and easy to make!

Sweet potato (1, medium to large, cut into 1" pieces)
Onion (1 small, diced)
Chickpeas (1 can, 14 oz, drained)
Diced tomatoes (1 can, 28 oz, with juices)
Red lentils (1/2 cup)
Garlic (4 cloves, minced)
Curry powder (2 tbsp)
Ground cumin (1/2 tbsp)
Garam masala (1 tbsp)
Vegetable broth (2 cups)
Salt & pepper (to taste)

Directions:
1. Add all ingredients to the slow cooker and stir.
2. Cook on low for 6-8 hours, stirring occasionally.
3. Once thickened, serve with chopped cilantro and naan.
