Introducing the team.

Most of you know Dan, but only some know me.
I’m the face behind most of the content you see on our socials 💻

I’ve been working on and off in the shop for the last couple of years, and we decided I could take more slag 😂 and start posting more content. (On and off, as life gets busy with family and farming 🐮🐴)
We also decided to get a thing going called and set up an online shop.

But why don’t I mind working here, and how did I even end up in this situation? 🫠
Well… when I moved to Ireland back in October 2018, I wanted to buy a sh***un. I walked into this shop and somehow NEVER bought one 😅 but got a ring instead 8 years later. Not a bad deal 🤣

Besides, I’ve got 10 years’ experience in retail too — as I had to finance uni in Germany somehow so ended up working with brands like Carhartt, Vans, Nixon etc. (We even sold vinyls, CDs and concert tickets ❤️)

Along the way, I got a puppy called Finn (Brittany), who got me into hunting. In 2018, I passed my German hunting licence exam after doing a 9-month course.

So now you get the full-circle thing!

I don’t mind working here because hunting and field sports would be one of my biggest passions, besides horses. So if you want to know anything about hunting clothing — I’m the girl to talk to 🤌🏻

You’ll find me in the shop most days, and if you have any questions or enquiries, please give us a shout!

And for all the female hunters 👸 out there — call in for a coffee! I’d love to meet you 🦌❤️

… goes Salami. Or Schinken! 🤤

As a german potato, I do love good “Wurst”!

Very common in Germany is to have fresh bread and different types of Wurst and cheese for dinner. It’s called Abendbrot.

Anyhow, I do love good Schinken (dry-cured ham) or salami. So I do dream of a dryager and someday well get one and I can make all the stuff I want!

Did you know that there are different ways you can “age” your meat or wonder what aging actually does to venison? 💡

It’s not just about making meat more tender. Nope - the technique you choose can completely change the final flavour and texture.

🥩 WET AGING
Venison is aged in a vacuum-sealed bag, allowing natural enzymes to tenderise the meat over time.
🤤 Result:
Tender, juicy venison with a clean, natural flavour and very little moisture loss.

🥩 DRY AGING
Venison is aged uncovered in a controlled environment, allowing moisture to evaporate while enzymes work on the muscle.
🤤Result:
More concentrated, complex flavours with a deeper, richer character. The dry outer crust is trimmed away before cooking.

🥩 EXTENDED VACUUM AGING
A longer form of wet aging, where venison stays sealed in a high-barrier, low-oxygen bag for an extended period.
🤤Result:
Very tender venison, while keeping more of that natural, fresh-meat flavour.

🦌 SO, WHAT’S THE DIFFERENCE?
Wet aging → tenderness + moisture
Dry aging → tenderness + intense flavour
Extended vacuum aging → maximum tenderness + natural flavour

Venison is naturally lean and delicate, so understanding how each technique works can make a huge difference to the finished product.

Could you taste the difference?
And - ☝🏻 which one would you try?

What do you make of this?

Chatty and I made this venison cuts chart and it got me thinking… how much of this actually reflects how we use a deer in real life? 🤔

Would you use all of the cuts shown here, or are there some you’d never bother separating out?
And what about that brisket? On a fallow, is there actually enough there to make it worthwhile as a separate cut, or would you be putting it to better use another way?

What’s your favourite cut of fallow venison?🥩Is it the backstrap, fillet, neck, shoulder… or are you a fan of the cuts that need a bit more time and love?
And then there’s the bit I’m really interested in…
How do you actually produce your venison? 🔪🍽️

Do you:
* Do the whole lot yourself from carcass to finished cuts?
* Break it down yourself but send it away for packing?
* Take the carcass to butcher and get it back all sorted and packed?
* Or somewhere in between?

And how did you learn?
Were you completely self-taught through trial and error, YouTube and books?Did someone in the family teach you?Or did you learn from a butcher, stalker, game dealer or another experienced person?
I’d love to hear how everyone else does it — what works for you, what you’ve learned along the way, and whether you’d actually follow this chart when breaking down a fallow.

So, what’s your favourite cut, what do you do with the brisket, and who taught you how to butcher your deer? 🦌🔪

Let’s talk hobbies… and equipment. 😅

In my case, I somehow chose two of the most amazing passions you can have: hunting and horses. 🐎🦌
The unfortunate thing? BOTH of them come with access to an unlimited amount of very nice equipment😬
And by “very nice,” I mean the price range can go from “sure, why not?” to “absolutely not, I have bills to pay.” 😂

The good thing is — you can pick and choose.
I genuinely believe it’s important to spend money on the right equipment. Buy well, buy once, and get years and years of use out of it.
It’s quality over quantity.

But… this is only MY equipment. 😉

Because we’re constantly handling, using and seeing so many different products and brands, we actually love trying new things. Testing them, comparing them, figuring out what works and what doesn’t — so we can help our customers find the right fit for their needs and their budget.
I recently made myself a little wishlist for personal stuff, hunting & dogs, and horse equipment — and honestly, it’s been a great way to stay focused on what I actually need (rather than everything I suddenly think I need 😂).

So now I’m curious…
Do you have a list of things you’re saving for and “working off”?

What’s that one piece of equipment you’ve got your eye on?

Or, let’s be completely unrealistic for a minute… 😂
What would you buy if money simply didn’t matter?!

🦌

– goes hot meal for school 🤯

As the boss of the house started Junior Infants on Monday, I thought it was the right time to once more show that venison is so much more.

Morgan brought venison bolognese pasta into school today. One of her favourite dishes when it comes to venison. We started her early — I’d say she was chewing her first bit of venison when she was four months old.

And she will always pick venison over other meats.

Yesterday I was talking to a customer and he said: “Do lots of people still hunt? Venison is not for me — it’s so tough.”

And I think that’s the problem. Some people don’t know how to cook venison, or simply don’t put the effort into it.

You don’t need to fry it all the time. You can make delicious meals with it. Meals that even work as a hot meal for school.

We are very happy that Morgan has a healthy relationship with food and meat. She knows where our meat comes from. She helps when a deer has been shot. She is part of everything — from going out on stalks, to vacuum packing it and cooking it at home.

Even with our cattle at home. Yes, she has her favourites, but she also knows that they only hang around until they’re old enough to move to the evergreen field. 😂

That’s what makes venison so important to me. The relationship with food that comes with the whole hunting process.

What do you think? Should kids learn about hunting and foraging in school?
