I’m insanely chuffed to have been part of the organising team for the very first European Championship in the 400m OCR discipline (obstacle course racing). OCR Association Ireland
Our organising team for this championship was fairly small, so we were all multitasking 😃
Communication, care, marketing, foresight, preventing and smoothing out unwanted surprises — that’s really my thing 🥰 (alongside coaching and therapy work).
And when I do something, I put my whole heart into it. So yeah — fair play to me 😃
There were athletes at the Championship (including elite-level and even some “stars” of OCR) from all ages and fitness levels.
The vibe was a brilliant mix of friendly and competitive — and honestly, it was pure class 😻
When someone sets a goal and gives it their best shot, while showing respect to others — that’s the kind of mindset every adult should aim for, no matter where they live or what they do.
There was plenty of stress, of course (as most of the key organisational work happens behind the scenes), but I really focused on keeping myself in a resourced, balanced state, and shared that calm with anyone on the team who was close to burning out.
Your state of mind is everything in what we do!!
As to my participation in the event…
I ran in a team race on the final day of the Championship — and up until the last minute, I didn’t even know if I’d be taking part (it wasn’t one of the core races in the 3-day event).
So in between shifts, I managed to support the country too 🤣
Going to keep reminding myself that I did a great job!
This is probably the biggest event I’ve ever helped bring to life — with both my hands and my heart 🧡

🌰🥜 *SPICED ROASTED NUTS*
INGREDIENTS :
- 2 cups of mixed nuts (almonds, walnuts, pecans, cashews etc.)
- 1 tablespoon olive oil
- 1 tablespoon honey
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Salt to taste
INSTRUCTIONS:
1. In a large bowl, combine the mixed nuts with olive oil, ensuring they are evenly coated.
2. Heat a non-stick pan over medium heat and add the coated nuts. Stir frequently to prevent burning.
3. After a couple of minutes, add honey to the nuts, stirring well to coat evenly.
4. Sprinkle ground cinnamon, ground cumin, smoked paprika, and cayenne pepper over the nuts. Continue stirring to combine the spices.
5. Cook the nuts for 8-10 minutes or until they are toasted and fragrant. Adjust the heat as needed to prevent burning.
6. Remove the pan from heat and let the nuts cool slightly.
7. Sprinkle salt over the nuts while they are still warm, adjusting to your taste preference.
8. Allow the spiced nuts to cool completely before serving. Store in an airtight container.
P.S. You may dry roast nuts without oil and honey!

🥧 Gluten-Free Chicken and Bacon Pie with Cottage Cheese 🥓
🌟Ingredients:
**For the Crust:**
- 2 cups gluten-free all-purpose flour
- 1/2 cup cold unsalted butter, diced
- 1/4 cup cold water
- 1/2 teaspoon salt
**For the Filling:**
- 1 cup cooked and shredded chicken breast
- 6 slices cooked bacon, crumbled
- 1 cup cottage cheese
- 1/2 cup grated red cheese (cheddar or your choice)
- 1 jalapeno, seeds removed and finely chopped
- 1/2 green pepper, diced
- 3 large eggs
- Salt and pepper to taste

**For the Crust:**
1. Preheat your oven to 375°F (190°C).
2. In a food processor, combine the gluten-free flour, cold diced butter, and salt. Pulse until the mixture resembles coarse crumbs.
3. Gradually add the cold water while pulsing until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
4. Roll out the chilled dough on a lightly floured surface and line a greased pie dish with it. Trim any excess dough hanging over the edges.
**For the Filling:**
1. In a large mixing bowl, combine the shredded chicken, crumbled bacon, cottage cheese, grated red cheese, chopped jalapeno, and diced green pepper.
2. In a separate bowl, beat the eggs and season with salt and pepper.
3. Pour the beaten eggs into the chicken and bacon mixture. Mix well until all ingredients are evenly coated.
4. Pour the filling into the prepared pie crust.
5. Bake in the preheated oven for 35-40 minutes or until the filling is set and the crust is golden brown.
6. Allow the pie to cool for a few minutes before slicing.
