Sweet Potato Waffles with Smashed Avocado & Hot Honey

If you’re looking for a quick, nourishing breakfast or lunch that feels a little bit special, these sweet potato waffles are calling you! They’re sooo sweet and delicious. Crispy on the outside, soft in the middle, topped with creamy avocado, a runny poached egg and a drizzle of hot honey. 🤌

Ingredients (1 serving)

For the waffle:
• ½ cup mashed sweet potato
• 2 tbsp flour
• coconut oil/ butter for greasing the waffle maker

For the topping:
• ½ avocado
• Squeeze of lemon juice
• Pinch of sea salt
• 1 poached egg
• 1 tsp honey & 1 tsp butter
• Chilli flakes

Method

1. Mix the mashed sweet potato and flour until combined.
2. Spoon into a preheated, greased waffle maker and cook for around 5 minutes until golden and cooked through.
3. Mash the avocado with lemon juice and sea salt.
4. Top the waffles with smashed avocado and a poached egg.
5. To make the hot honey simply heat up honey & butter and add the chilli flakes. Drizzle over the hot honey and finish with extra chilli flakes if you like it spicy!

Simple ingredients. Proper food. Big flavour. ❤️

I’m never going back after these 😍✨

These are so easy to make and perfect for the summer. No baking required!

All you need:
- 2 ripe bananas
- 1 cup desiccated coconut
- 50g dark chocolate

Mash up the banana and mix in the coconut. Form into 5-6 balls and squish down using a fork to make cookie shapes. Freeze them for 30 minutes.

Meanwhile melt your dark chocolate. Drizzle it over the cookies and freeze again for another 30 minutes.

Enjoy these for your afternoon snack! The kids will love them too 🥰

Healthy Chocolate Date Bark

The easiest sweet treat made with just 4 ingredients — naturally sweet, crunchy, chewy, and packed with nourishing fats + fibre.

Ingredients:

* 15 Medjool dates, pitted
* ¼ cup macadamia nuts, chopped
* ¼ cup pistachios, chopped
* 400g dark chocolate

How to make it:

1. Line a small cake tin or dish with parchment paper.
2. Press the dates together firmly to create a caramel-like base.
3. Sprinkle over the macadamias + pistachios.
4. Melt the dark chocolate and pour over the top.
5. Chill for 30 mins until set.
6. Slice and enjoy straight from the fridge

Healthy Chicken Sausage Rolls (better than Greggs!)

These homemade chicken sausage rolls are golden, flaky, packed with protein and veggies, and honestly SO good. Perfect for meal prep, lunchboxes, freezer batches or an easy family snack.

Makes 12 sausage rolls (I made 6 and froze the remaining filling for another day 🙌)

Ingredients (makes 12):
• 600–650g puff pastry
• 500g chicken mince
• ½ zucchini, grated
• ⅓ carrot, grated
• 1 garlic clove (crushed)
• 1 small white onion, finely diced
• 2 tbsp ketchup
• ½ tsp salt
• Black pepper, to taste
• 1 egg yolk
• Sesame seeds (optional)

Method:
1. Preheat oven to 200°C and line a tray with baking paper.
2. Squeeze excess moisture from the grated carrot and zucchini.
3. Add the chicken mince, vegetables, garlic, onion, ketchup, salt and pepper to a bowl and mix well.
4. Cut your 300g puff pastry sheet into 6.
5. Spoon the filling (approx 3 tbsp) onto each pastry and shape into a 6 sausage shapes.
6. Roll tightly and use a fork to seal the edges.
7. Brush with egg wash.
8. Bake for 25–30 minutes until golden and cooked through.
9. Let them cool for 10-15 mins.

Serve with a yummy side salad & ketchup to dunk! 🤍
