I’m all set! 20 weeks of training, 1200km ran, too many early mornings, lots of sacrifices to the social life, but one unbelievable goal to achieve in the year I’ve turned 40! And all to raise money for such a wonderful charity Pieta

As I make my way around the 42.2km I’ll be thinking of my cousin Rob and pushing to the finish line in memory of him.

Massive thank you to everyone who has supported me along the way. Big up Eoin Ó Luasaigh for not divorcing me, as well as to all my family, friends and clients and, not forgetting, my brilliant coach Martin O’Connor. Huge thanks to everyone who has donated along the way and sent messages of encouragement.

If you would still like to donate you can follow this link: https://eventmaster.ie/fundraising/pages/JC21588781

Stay tuned to my stories as I’ll try to post a few along the route tomorrow and hopefully you’ll see one of my lopsided grin after I’ve crossed that finish line.

Until then, I’m off to put my feet up and eat my body weight in Carbs! 💪❤️

Win a free place for you and your pal at this weekends Evening Align Pilates session. Just share this post and comment who you would bring along with you. Winner announced Friday evening (so make sure you can attend).

You will enjoy an hour and fifteen minutes of Pilates to strengthen and lengthen the whole body. Indulge in a wonderful cheese and charcuterie board and chocolate dipped strawberries with herbal teas and cordial drinks. We will then finish by unwinding with a short guided meditation and time to relax (bring a blanket with you to help switch off).

I hope to see you there for an alternative but restorative Saturday evening ❤️

Well, what a feel good trip! Completely avoided socials whilst I was away to be present in the moment. Not many pictures taken either but brilliant memories made! Time spent with family, old pals, and three runs in the English countryside with unbelievable weather☀️.

Thorpe park, London City Centre for a trip to see where the King lives (for the girls) and to meet old friends, a trip to London for Seosamh to the Imperial War Museum, park trips, a sensational takeaway curry (you can’t get them like that in Ireland), English pub visits, fun in the garden and lots of lovely w**e!

Couldn’t have asked for a better break - didn’t have to cook or go food shopping which was a massive win too! Thanks to my brother and sister in law for having us mad lot for six nights! Until next time…❤️

Back to classes this evening - just Boxfit at 7pm and Pilates at 8pm. Hope to see you there 💪❤️

Finished my morning workout with a snack before I headed off to get some jobs done! Rather than reach for something like a protein bar I ate two of these delicious muffins. Only 69 calories each and over 9g of protein per one. Zero rubbish, no sugar and makes you feel good (and full)! Protein bars have their place if you were stuck, but these are top drawer and much cheaper!

6 turkey rashers cut up into small pieces
200g tub of low fat cottage cheese (you can’t taste it)
4 eggs
2 egg whites (use 50g of egg whites if you have the bottle)
Salt and pepper
50g low fat grated cheddar

You can add chilli flakes for a bit of a kick too

Method:

Whisk up the eggs with the cottage cheese (you can blend the cheese to make it smoother but I don’t bother)
Spray muffin tin (12 hole) with spray light
Divide up the chopped turkey rashers and cheese between each
Pour the egg mixture evenly between
Bake in preheated oven at 180 for around 15 minutes (should be golden on top so adjust baking time as needed).

Quick, easy and delicious!

Keep in fridge for 3-4 days 👌😘

Macros per muffin:
69 calories
9.2g protein
3.1g fat
1.2g carbs

Thank you for all of the 40th birthday love. The messages, cards, gifts and well wishes were really appreciated. I started off the morning with lots of love from my Spin and Pilates groups (thanks to Av and Ger for all the decs, and to Sue for calling in to join for the last few tracks and more balloons)!

I took a fabulous trip to SuperValu to spend my birthday money on my fridge!

Then it was off to swimming lessons with the girls and Aodh, where in true ‘old age’ style I had a twenty minute nap!

Rounded off the day with cooking dinner and attending Seosamh’s soccer match and now sat down with my doggy and a glass of bubbles.

40 never looked better! Roll on 50! 🤪❤️
