Starting with the fact that 70 - 80 percentage depends upon what you eat. Have more healthy calories you will gain muscle, create calorie deficit and you will loose fat.
So don't stress too much on the number of reps, coz diet is a major and more important factor.
But to help you guys decide of how many reps you should go for, here is the short and simple answer to how you should lift:
1. Power lifters - 2-4 reps
2.Power athletes - 6-10 reps (people who need power for a short burst, 100m runners, shot put thrower etc )
3.Muscle hypertrophy - 10-12 reps ( body builders, fitness models)
4.Endurance athletes - 14 - 18 reps ( eg - marathon runners)

Avoiding dairy??
Here are some results of studies carried by a few leading organisations, about effects of dairy on health.
1.According to studies and researches, higher intake of diary ( > 2 servings per day compared with no intake) was associated with lower risk of cardiovascular mortality, major CVD (cardiovascular disease), stroke and all types of cardiovascular events overall. No significant association with myocardial infraction was observed.
2. Cheese intake was not significantly associated with all types of cardiovascular events.
3. Butter intake was low and was not significantly associated with clinical outcomes.
Bottom line: dairy products are a very good source of fats and proteins for the body and one should have them provided they are not allergic to them
