Don’t Mix or Powder Millets 🚫🌾
Millets aren’t the issue—flour & mixes are! Whole grains keep the fiber-protein matrix intact → slower glucose release. Flour breaks it → sugar spikes.
✅ Soak 8–12 hrs (with lemon/curd whey) → reduces phytates, boosts minerals, cuts bloating.
✅ One millet per meal → better digestion, no mixing. Rotate weekly.
✅ Avoid flour storage → it turns rancid, irritates gut & loses nutrients. Use stone-ground fresh within 7 days.
✅ Choose wisely:
Ragi → high calcium but kidney stone risk if excess.
Sajje → thyroid caution.
Foxtail, Little, Barnyard → best for sugar control (when soaked).
