The Rainbow Protein Bowl:
Ingredients:
- Chickpeas
- Tomatoes
- Tofu/Paneer
- Spinach/Lettuce
- Olive Oil
- Salt
- Pepper
Instructions:
- Boil the chickpeas till you have a soft but firm consistency
- Drizzle olive oil in a pan. Grill your tofu/paneer on a medium-low heat
- Toss the chopped veggies and protein in a large bowl
- Season with salt, pepper and olive oil
