Turns out sheep like it salty too.

In summer, Icelandic sheep roam free. Some graze on seaweed washed up on the shore.

Right now, in September, farmers are gathering them for 'Réttir', the annual autumn round-up, bringing the flocks home before winter.

The salt that falls on our production floor goes to local farmers in the Westfjords, who feed it to their flocks through the dark months. Nothing goes to waste.

Cured salmon: graflax in Icelandic. Here with seaweed salt.

Old nordic method of preserving fresh fish. Still really festive and popular because it just tastes so damn good. Best on toasted bread.

With September comes peak harvest season in Iceland.

Fresh potatoes, butter and salt. We could live on this.

And once potatoes reached Iceland in the late 1700s, we sort of did. In a country with little fresh produce, they became one of the main sources of vitamin C.

Have you tried salting your coffee?

Amy, our Head of marketing and sales, hiked the Laugavegur trail the other day and of course she packed salt in her backpack. Theory says that adding at tiny pinch of salt to your coffee reduces bitterness and brings out natural sweetness.

Salt takes time. We give it what it needs.

Did you know that our process time is usually 7-10 days from sea to salt?
However weather and unforeseen circumstances can stall the process.
We also have to run continuously, all days of the year. We can not stop because if you turn off the hot water we get leaks, or it would stress the steal.

We went foraging around our saltworks in Reykjanes earlier this summer. Did you know Blálilja tastes like oysters. And if you pickle seaweed bulbs they are similar to kapers?
