George Coedes spent most of his adult life recording and translating the Sanskrit and Khmer-language inscriptions of Cambodia and Thailand, and it thanks to him and his colleagues that we know the dates and histories of Angkor's ruler, and of their predecessors in Funan and Chenla etc...

We can see a beautiful view from Wat Preah Kral pagoda and Kulen mountain, and when we are on top of the pagoda, we can see Run Ta Ek town.

She makes these noodles for sale to local customers every day. Now, some travel agents in Siem Reap are booking her for noodle demonstrations, which allows her family to generate extra income from tourists and showcase their family culture.

Personally, I have had some experiences with my mother making and selling these noodles in the village, especially during village festivals at night.

Making Cambodian noodles requires time to develop better skills. We need to measure and assess the quality of the rice, control the water boiling, adjust the fire, and even consider the quality of the rice flour. Understanding these factors will help us make high-quality noodles, as some rice noodles can be of raw quality if not prepared properly.
