1️⃣ Breakfast cookies

Bored of your normal breakfasts? Try these nutritious breakfast cookies instead.

There are lots of variations of these but mine have minimal sweeteners (most of the sweet taste comes from the banana and the cranberries) so ideal for breakfast. If you have a particularly sweet tooth or want them as more of a sweeter treat then you might want to add a bit more maple syrup.

Full of fibre and healthy fats with flax & pumpkin seeds but with lots of oats and peanut butter to keep you full until lunch.

Ingredients for 10 cookies:
2 tbsp ground flax seeds
2 cups gluten free oats @justnatural_uk (PR)
2/3 cup desiccated coconut
1/2 cup peanut butter @justnatural_uk (PR)
1 mashed banana
3 tbsp maple syrup
1/2 tsp baking powder (use GF if needed)
1/4 cup dried cranberries
1/4 cup pumpkin seeds
1/4 cup pistachios @justnatural_uk (PR)

Preheat oven to 160C fan

1️⃣ Prepare your flax ‘eggs’ by mixing two 2 tbsp of ground flax with 5 tbsp of water and set aside
2️⃣ Add all the other ingredients to a large mixing bowl and add in the flax eggs. Stir well to combine
3️⃣ Divide into 10 equal portions and mould them into a cookie shape on a large baking tray. I used a cookie cutter and scooped the mixture inside and pressed down slightly as it was easier.
4️⃣ Bake for about 15 mins 06/10/2023
