Vegan Mango Lassi Popsicles by .and.caramel 😋 A fun and refreshing take on lassi! Get the recipe below!
Ingredients
3 ripe Ataulfo mangoes, peeled and chopped (once puréed, should measure 1.5 cups)
3/4 cup coconut cream
3/4 cup plant-based plain yogurt, unsweetened
1/3 cup granulated sugar
1/4 tsp cardamon powder (optional)
Instructions
Blend the mangoes until they become a smooth purée. If your blender is not high-powered, you may choose to press the purée through a sieve before continuing with the recipe to remove the unblended fibers.
Add the coconut cream, yogurt, sugar and cardamom, if using. Blend until smooth. Pour into ice pop molds and freeze for 30 minutes. Add the ice pop sticks, and then freeze until set for another 4 hours.
To remove the pops from the mold, run the sides of the molds under hot water taking care not to have water pass over the exposed ice pops. Otherwise, the ice pops can be left out on the counter for 5 or until they remove easily.

How did it take you to find your balance in headstand? Guess how it took me, longer than you think.

I love when I see who effortlessly float up to headstand with just a little instruction. For me the journey was filled with much struggle. After a year of toppling over, I managed to stay up for a few breaths. I still remember the day I didn’t fall. It felt like a miracle.

Headstand is a foundational inversion. The patterns you set up here will help your alignment in forearm balance and handstand. Learning good technique from the beginning sets you up for healthy practice for the long haul.

Pasta w/ Cherry Tomato, Kale & Artichokes in a light white wine sauce 🌿🍃
Making this easy and light pasta dish this weekend, now that I finally got my hands on some fresh kale 🎉 It's that feeling when you have wanted to make something you're craving for weeks 🌞🎊🎉 What's your plans for the weekend? Will be taking it easy today after a super productive work week 💪📊📈❤
Feel free to sub the white wine for veggie broth if you prefer, and spinach for the kale!👌🌿
INGREDIENTS:
1/2 lb. pasta of your choice
1 T oil
1/4 red onion finely chopped
2-3 cloves minced garlic
1 pint cherry or grape tomatoes sliced
3/4 cup white wine or veggie broth
1 T dried basil
3/4 tsp kosher salt
1/2 tsp pepper
1/2 medium bunch kale removed from stem and chopped in 1 inch pieces and gently massaged for a few seconds with touch of oil
1 cup marinated artichokes, drained
3 T capers (optional)
Juice of 1/2 lemon
Garnish: Red chili flakes (optional)
DIRECTIONS:
1. Put pot of water on to boil for pasta.
2. Meanwhile, add oil to large pan over medium heat and once hot, add onion, stir frequently adding bit of water if pan is too dry along the way.
3. Cook 5 min, add garlic and tomatoes and cook another 3 min, careful not to burn garlic.
4. Add wine, basil, salt and pepper, stir, and raise heat if needed, to get bubbly. Then lower heat a bit to cook at a low simmer (just bubbly) for several min until liquid is reduced by half.
5. Add kale and artichokes, stir, put cover on pan, and cook another 1 min. Uncover and stir. Kale should be bright green and slightly.
6. Add sauce to cooked pasta and gently stir, adding capers and lemon juice.
7. Taste and add more salt/pepper if desired.
8. Serve and top with optional red chili flakes for some spicy heat! 🍅🌿🍃

Extra Creamy Classic Hummus
2 cans of organic chickpeas (drain one can and reserve water from the second can)
1 cup good quality tahini
Juice from one large lemon
Some Chickpea juice from the can (use half first, then add more if you want creamier consistency)
3-4 cloves of garlic
1-2 tsp salt
1 tsp pepper
Blend everything in the high speed blender until smooth and creamy. Plate the hummus in a shallow bowl, decorate with chopped purple onions, roasted chickpeas, cherry tomatoes, parsley, lemon wedges, and crushed red pepper. Enjoy with warm pita bread.
