Healthy options lead to healthier outcomes !
Raw Food Bounty Bars
Ingredients
• 2 cups Organic desiccated coconut or threaded coconut
• Organic coconut cream- use the fatty part and keep liquid for a smoothie. (so don’t shake it or heat the can before opening it)
• 2 cakes Lindt or any other brand of dark chocolate
• ¼ cup (or more if you like it sweeter) maple syrup
Throw all the ingredients (apart from the chocolate) in your food processor, and mix for 30 seconds until combined. Don’t over process the mix, if you want a bit of texture.
(If you mistakenly add liquid and the mix goes too soft to bind you can add a ¼ cup more coconut and 2 tbsp melted coconut oil to get it to bind.)
Mould into rounds or bars, placing them on baking paper on a plate and then leave them in the fridge for at least 15-20 minutes until they set (the coconut oil in the coconut cream hardens)
Melt the chocolate and when the bars or rounds are set dip them in chocolate and put back on baking paper on plate in the fridge. To help the chocolate to drip off as you dip use two forks to lift the bar you have submersed in the melted chocolate.
