We're in the shops!!
Adapted a delicious soup recipe from the Moro East cookbook the other night - really worth a try: gently cook a chopped onion in oil for 10 minutes, add 2 chopped garlic cloves, 2 tsp crushed cumin and a chopped cauliflower with some salt and pepper, and steam for 15 minutes with the lid on. Mash coursely, add a small tin of coconut milk and 500ml vegetable stock. Simmer for another 10 minutes, blend until smooth (adding water if it is too thick), and serve with chilli flakes and/or roasted pine nuts on top. Yum!!
Ever wondered what to do with those aubergines hiding at the back of the fridge? I say grill them whole until they blister and burn all over, scoop out the flesh and mash together with tahini (or yoghurt), lemon and garlic - Ahhh. The smell of the burning aubergine does something for me - just love it! Anyone with any other aubergine suggestions??
