Itโs been a hot minute since Iโve put a post up, but Iโm back!! ๐ซถ๐ผ
Iโve been pretty busy the past few weeks (months even ๐คฃ), prepping for our wedding, getting married and honeymooning in Aus! โ๏ธ๐ป
So sad thatโs itโs all over but it was honestly the BEST 2 weeks of our lives! Iโm feeling relaxed, refreshed and ready to get stuck back into work! ๐ช๐ผ

Me and Rowan felt like something sweet but super quick to make, so we jumped on this (probably really old now) trend ๐
Choccy date bites ๐
Dates
Peanut butter
Crushed nuts
Chocolate, melted
Sprinkles - optional (had to keep the toddler happy but they made a surprisingly good addition! ๐๐ผ)
Cut the dates down the middle, spread with some peanut butter, sprinkle with some crushed nuts &/or sprinkles then drizzle over some melted chocolate! Pop them in the fridge to set!
That easy & bloody tasty! You could store these in a container in the fridge, if they last that long! ๐

I love a warm breakfast, especially over winter but Iโve got to admit some mornings I just donโt feel like eating my oats ๐๐คซ thought Iโd play around with one of my favourite ways to have eggs, but this time sweeten them up! ๐
Banana omelette ๐
3 eggs
1 tsp cinnamon
Dash of vanilla essence
1 banana
Sugar free maple syrup
Toppings of choice
Slice up the banana, and lay them out in a hot pan with some butter. Turn them over once theyโve cooked for a couple of minutes. They should be nice and golden!
While the banana is cooking, beat together the eggs, cinnamon and vanilla then pour over top of the eggs in the pan. Turn the heat down a little so it doesnโt burn. Once the egg is nicely cooked underneath, flip it in half!
Serve with a drizzle of sugar free maple syrup, some more cinnamon & any other toppings you fancy! Some fruit, berries or a drizzle of biscoff would also be delish on this! ๐คฉ

End of an era this week! ๐
For those of you that donโt know, Iโll be heading over to Flex Prebbleton next week to join the amazing crew over there! ๐ฅณ๐ฅณ
Iโve been apart of Lincoln since day dot & SO much growth has happened over these past 4.5 years both professionally and personally! Itโs bittersweet leaving Lincoln and all the memories but Iโm ready and absolutely buzzing for this next chapter! ๐

My favourite midnight snack when I was growing up was a peanut butter and jam sandwich, so of course when Fix and Fogg brought out their new flavour I had to try it out to make sure it was legit! Can confirm it 110% was! ๐๐๐ผ
Instead of just eating the whole jar by the spoonful ๐ I thought Iโd have a wee play around and create a yummy recipe for you guys ๐ โฆ & I bloody nailed it! ๐คฉ
PB & J Slice ๐ซถ๐ผ
For the base;
1 cup oats, blended into a fine flour
1/4 cup of oats
1/4 cup smooth peanut butter
1/3 cup honey
*shredded coconut would also go great in this, but if you add it youโll need a little more liquid! Add a splash of your milk of choice! ๐๐ผ
Middle layer;
Fix & Fogโs PB & J
Top layer;
Dark chocolate, melted
Mix all the base ingredients together and press into a lined tin, spread over a layer of the PB & J, then top with the melted chocolate. Pop in the fridge to set for a good 30 mins then cut it up! SO EASY! ๐๐ผ
Itโs awfully addicting, so try not to eat the whole lot at once ๐

Who doesnโt love a good banana bread?! Perfect for weather like this too! ๐๐ผ
This is one of our family favourites as itโs delicious and super quick to whip up! Itโs also a great addition to the kids lunch boxes! ๐

2-3 mashed bananas (if small, go with 3!)
2 eggs
1/2 cup olive oil
1/4 cup milk of choice (Greek yoghurt works good too)
1/3 cup honey
1 tsp vanilla essence
1 3/4 cup flour
1 tsp baking soda
1 tsp cinnamon
Pinch of salt
Preheat the oven to fan bake 180 degrees & line a loaf tin with baking paper.
Mix together eggs, milk, oil, honey, vanilla and mashed bananas.
In a separate bowl sift the flour, baking powder, cinnamon and salt.
Add the wet ingredients to the dry ingredients and stir till combined.
Pour into the prepared loaf tin & sprinkle some coconut sugar/cinnamon on top (this step is totally optional but I love it cause it adds a little crunch ๐คค)
Takes 50-55 minutes in the oven. Let it cool before slicing (if you can wait that long ๐)
