Healthy Breakfast Smoothies

Prep fruits and veggies ahead of time to make blending these healthy breakfast smoothies a breeze on busy mornings.

Recipe type: Beverage, breakfast
Serves: 1 each
Prep time 10 mins
Cook time 5 mins
Total time 15 mins

Ingredients
• Freeze into each container:
• ½ banana

Strawberry Goji:
• big handful of strawberries, sliced
• ¼ cup dried goji berries

Peach:
• 1 peach, sliced
• handful of raspberries
• ½ tablespoon almond butter

Mango Maca:
• slices from ½ of a large mango
• 1 peach, sliced
• 1 teaspoon maca powder

Spinach & Mango
• slices from ½ of a large mango
• handful of fresh spinach
• 1-2 teaspoons matcha

Cherry Blueberry Cacao:
• ⅓ cup tart cherries
• ⅓ cup blueberries
• ½ - 1 tablespoon raw cacao powder

Blend each smoothie with:
• ½ - ¾ cup Almond Breeze Almondmilk Original
• a few pieces of ice

Instructions
1. Assemble ½ banana into each freezer container (or freezer safe baggie). Add fruits/vegetables, then place your containers into the freezer until you're ready to blend each one.
2. Blend each smoothie with a few pieces of ice and ½ cup to ¾ cup almond milk (enough almond milk to get your blender blade moving).
3. Blend in "extras" (goji berries, almond butter, maca, matcha, cacao) at the end.

Notes
I use a Vitamix - if your blender isn't as powerful, let your frozen smoothie ingredients thaw at room temp for just a few minutes.

5 Minute Chocolate Mug Cake

This recipe is made with ingredients that all have something to offer nutritionally, so while your sweet tooth is being satisfied your body is also being nourished

Now keep in mind that this is a recipe for chocolate cake — the ingredients are wholesome, but it’s still cake! Enjoy in moderation

Here’s what you need for 1 mug cake:

•4 Tablespoons almond meal
•4 Tablespoon coconut crystals
•2 Tablespoons unsweetened cocoa powder
•2 Tablespoons whisked egg
•4 Tablespoons coconut milk
•1 generous Tablespoon coconut oil, melted over low heat
•1/8 teaspoon vanilla extract
•3 Tablespoons dark chocolate chips

1. In a microwave safe mug, combine the almond meal, coconut crystals, and cocoa powder. Mix well, until all the lumps are gone.

2. Add the whisked egg and mix. Add the coconut milk, coconut oil and vanilla extract. Mix well. Add the chocolate chips.

3. Microwave on high for 3 minutes.

4. Serve immediately!

Nutritional Analysis: One serving equals: 332 calories, 25g fat, 53mg sodium, 25g carbohydrate, 3g fiber, and 7g protein

Grab two pieces of paper and something to write with.
Answer the following questions…
What is your greatest fear?

THE “PROOF” EXERCISE

Our 2-million-year-old brain doesn’t want us to be happy.
Our 2-million-year-old brain wants us to stay safe.

If we feel threatened or are facing challenging times, Fear will revert our brain back to old memories of past failure to prove to us it’s best we don’t take the next step forward and do the thing.

The Proof Exercise is a powerful self-reality check that combats this. It’s what shifts our brain from the, “no I can’t,” mentality to the, “yes I can.” I’m really excited to share this exercise with you. It’s helped me in my life tremendously. I know it will do the same for you.

Grab a piece of paper and something to write with.

Find a quiet spot where you can focus.

Write down the three fears that cripple you the most.

Leave about a paragraph or two of space in between each fear.

For each fear, write down 1-2 memories from the past where your behavior, mindset, and results proved this fear wrong.
Example: For a man who wrote down: “I’m scared to ask for the promotion I deserve at work.”

“It was the summer of 2014 when I approached my wife to be, Gloria. I smiled at her...she smiled back. I said hello…she said hello back. We went for a walk and talked. There was no judgment, and I wasn’t rejected. I was a strong, powerful, loving, humble, and grounded man. I went after what my heart desired, and I got it.”

The truth is, he has no reason to fear rejection asking for the raise he deserves because the proof is right there in front of him.

He can be fearless.

He can go after what he truly wants, and he most certainly can do it again.

Salsa verde salmon with smashed chickpea salad

Prep:15 mins
Cook:20 mins
Serves 1, plus 1 lunchbox

Ingredients

• 3 tsp olive oil
• 1 orange , zested and juiced
• 2 skin-on salmon fillets
• small bunch of parsley (including stalks), finely chopped
• ½ tbsp Dijon mustard
• 1 shallot or 1/2 small red onion, finely chopped
• ½ tbsp red wine vinegar
• 400g can chickpeas , drained and rinsed
• 2 roasted red peppers from a jar, drained and chopped
• 50g kale

Method

STEP 1
Heat the grill to high. Whisk 1 tsp of the oil with the orange zest, a splash of the juice, lots of black pepper and a small pinch of salt. Put the salmon, skin-side down, on a non-stick baking tray and pour over the marinade. Leave to marinate at room temperature while you make the salsa.

STEP 2
Put the parsley, mustard, half the shallot, the vinegar, 1 tsp oil, and the remaining orange juice in a small food processor and blitz to a thick sauce, adding a splash of water to loosen if needed.

STEP 3
Heat the remaining oil in a frying pan and fry the remaining shallot for 5 mins. Stir in the chickpeas and some seasoning, turn up the heat and stir until the chickpeas are just starting to crisp. Mash roughly with a potato masher and stir in the roasted peppers and kale. Add a splash of water and cover with a lid until the kale is wilted. Keep warm over a low heat.

STEP 4
Grill the salmon for 4-6 mins, or until cooked to your liking. Spoon half the chickpeas onto a plate, top with a salmon fillet (leaving the skin behind if you like), and spoon over some of the salsa verde. Leave the remaining salmon fillet to cool to use in the lunchbox, see tip below.

Bolognese Sauce

SERVES 6

YOU'LL NEED
• ½ Tbsp olive oil
• 3 cloves garlic, minced
• 1 medium carrot, diced
• 2 stalks celery, finely chopped
• 1 medium yellow onion, diced
• 6 oz ground turkey
• 6 oz ground pork
• 6 oz ground sirloin
• 1 can (28 oz) diced tomatoes
• 2 Tbsp tomato paste
• 1 cup reduced-sodium chicken or beef broth
• 1 cup milk
• 2 bay leaves
• Salt and black pepper to taste
• 1 package fresh or 1 lb dried fettuccine
• Parmesan, grated

HOW TO MAKE IT
1. Heat the oil in a large skillet over medium heat. Add the garlic, carrot, celery, and onion, and sauté until the vegetables are cooked through, about 5 minutes.
2. Add the turkey, pork, and ground sirloin and stir with a wooden spoon until the meat is no longer pink.
3. Drain any accumulated fat from the bottom of the pan and add the tomatoes, tomato paste, broth, milk, and bay leaves.
4. Turn the heat down and simmer for at least 30 minutes (and up to 2 hours), until the sauce has thickened. Season to taste with salt and pepper and keep warm.
5. Cook the pasta in a large pot of salted boiling water according to the package instructions.
6. Drain the pasta and toss with hot sauce. Serve sprinkled with Parmesan.

Eat This Tip

This sauce keeps (and freezes) perfectly, so go ahead and double the recipe, but don't limit yourself to serving it over spaghetti or fettuccine. Rich Bolognese is great served over soft polenta or used to dress 3-cheese ravioli, and it is a critical component in a rich, l***y, authentic Italian lasagna.

FEAR + COMMON TYPES

Like Jekyll and Hyde, most of us live two lives.

The life we live in the now and the life we dream about living, the one we keep bottled up inside of us that would be ours if we got out of our own way — if we conquered our Fears.

Fear is what stops us from taking action, being our best, and moving forward toward the life we want and deserve to live.

“Why bother?” We tell ourselves…. “I’ll fail anyway…”

It’s this type of irrational thinking that leads us to a darkness where distrust, emotional dysregulation, and a slew of other self-deprecating characteristics lay waiting for us.

Knowing this, why do we allow ourselves to be held down by Fear? Why do we rationalize in our minds second-guess- ing who we are and what we’re capable of? Why do we put ourselves down in the face of challenge instead of building ourselves up?

For the majority, it’s an underlying desire for safety, security, and certainty. Simply put, human beings love to feel safe!

In fact, we’re wired to want that.

It’s in our DNA to survive, defend, and fight for our safety and comfort.

Unfortunately, most people love feeling safe so much that they unconsciously build their “play life small” muscle burrowing away in their comfort zones, sabotaging their true potential.

Reality Check: The life you want to live, the experiences you dream about, the achievements you desire, and the person you want to be is on the other side of fear. Life really does begin at the end of your comfort zone. It always has, and it always will.
