Smashed A.1. Swiss Burger

SERVES 4

YOU'LL NEED
• 1⁄2 Tbsp canola oil, plus more for the burgers
• 1 medium yellow onion, sliced
• 2 cups sliced white or cremini mushrooms
• Salt and black pepper to taste
• 1 lb ground sirloin
• 4 slices reduced-fat Swiss cheese
• 4 potato buns, split and lightly toasted
• 4 Tbsp A.1. Steak Sauce

HOW TO MAKE IT
1. Heat the oil in a large skillet or sauté pan over medium-low heat.
2. Add the onion and cook for 3 to 4 minutes, until soft and translucent.
3. Add the mushrooms and cook for 6 to 7 minutes, until the mushrooms and onions are browned and caramelized.
4. Season with salt and pepper and remove from the heat.
5. Heat a light film of oil in a large cast-iron skillet over medium-high heat. Form the sirloin into four loosely packed 1-inch balls, being careful not to overwork the meat.
6. Season all over with salt and a bit of black pepper.
7. Add to the pan and cook for a minute or two, then place a spatula on top of each patty and press down to flatten the meat into a burger about 1⁄3" thick.
8. Cook for about 2 minutes, until a nice crust develops.
9. Flip, using the spatula to scrape the burger free if necessary.
10. Top with cheese and cook for 2 to 3 minutes more, until the meat is cooked through.
11. Place the burgers on the toasted buns, then top with the mushrooms and onions. 12. Finish by drizzling a tablespoon of A.1. on each.

Let go of holding too tightly on the result.

Let go of forcing it to happen.

And it’s through the darkest of times that you will grow stronger.

Everyone who loses weight and keeps it off knows that there is NO magic pill, diet or secret

YOU have the ability to be consistent
YOU have the ability to make choices to support how you want to feel
YOU are powerful beyond measure
YOU are the magic. PERIOD

The road to success can be found in this very MOMENT.
Not an hour from now
And not tomorrow.
But NOW.

So my question to you is….

Chicken & lemon skewers

Prep: 20 mins
Cook: 25 mins
Easy
Serves 4

Ingredients
1 small pack mint , leaves picked
150g natural yogurt , plus extra to serve (optional)
1 lemon , zested and juiced
½ tsp ground cumin
½ tsp ground coriander
2cm piece ginger , grated
4 skinless chicken breasts, each cut into 6 pieces
4 wholemeal flatbreads or pittas
2 Little Gem lettuces , sliced
1 small red onion , sliced, to serve
pickled red cabbage , chilli sauce and hummus, to serve (all optional)
You will need
4 metal or wooden skewers

Method

STEP 1
Chop half the mint and put in a bowl with the yogurt, half the lemon juice, all the lemon zest, spices and ginger. Mix well and season with lots of black pepper and a pinch of salt. Add the chicken pieces, mix well and put in the fridge for 20-30 mins. Meanwhile, soak 4 large wooden skewers in water for at least 20 mins (or use metal ones).

STEP 2
When you’re ready to cook the chicken, heat your grill to a medium heat and line the grill tray with foil. Thread the chicken onto the soaked wooden or metal skewers and grill for 15-20 mins, turning halfway through, until browned and cooked through.

STEP 3
Warm the flatbreads under the grill for a couple of seconds, then serve them topped with the lettuce, chicken, red onion, remaining lemon juice and mint, and any optional extras such as extra yogurt or pickled cabbage, chilli sauce and hummus.

Like Jekyll and Hyde, most of us live two lives.

The life we live in the now and the life we dream about living, the one we keep bottled up inside of us that would be ours if we got out of our own way — if we conquered our Fears.

Fear is what stops us from taking action, being our best, and moving forward toward the life we want and deserve to live.

“Why bother?” We tell ourselves…. “I’ll fail anyway…”

It’s this type of irrational thinking that leads us to a darkness where distrust, emotional dysregulation, and a slew of other self-deprecating characteristics lay waiting for us.

Knowing this, why do we allow ourselves to be held down by Fear? Why do we rationalize in our minds second-guess- ing who we are and what we’re capable of? Why do we put ourselves down in the face of challenge instead of building ourselves up?

For the majority, it’s an underlying desire for safety, security, and certainty. Simply put, human beings love to feel safe!

In fact, we’re wired to want that.

It’s in our DNA to survive, defend, and fight for our safety and comfort.

Unfortunately, most people love feeling safe so much that they unconsciously build their “play life small” muscle burrowing away in their comfort zones, sabotaging their true potential.

Reality Check: The life you want to live, the experiences you dream about, the achievements you desire, and the person you want to be is on the other side of fear. Life really does begin at the end of your comfort zone. It always has, and it always will.
