Hi Everyone!! 👋 Big Announcement! After taking some time off from Shine On Fit I’ve decided to take a leap of faith and pivot in a direction that is both exciting to me & will still include my love of fitness ❤️
Over the next few weeks I’ll be rebranding and moving towards a few more passions I have including: Home Renovation | DIY | and | Holiday | - Of course Travel & Fitness will be sprinkled in!! So if you notice a name change and my face more noticeably in your feed, this is why! I look forward to the new content ahead!

February is American Heart Month 💖 Tonight I was able to support the American Heart Association through the National Charity League, Allen Chapter!! 🤗 My booth invited Moms & daughters to try a quick workout put on by Shine On Fit!!

🥘 One Pot Recipe: Smoky Cajun Shrimp Orzo
✨Ingredients:
* 1 pound dried orzo pasta
* 1 (28oz) can diced fire roasted tomatoes
* 1 tablespoon salt-free Cajun spice blend
* 1 tablespoon olive oil
* 2 teaspoons kosher salt
* 1/4 teaspoon freshly ground black pepper
* 4 cups water
* 1 pound raw large peeled and deveined shrimp, thawed if frozen
* 2 tablespoons fresh oregano leaves
✨Instructions:
1. Combine 1 pound dried orzo pasta, 1 can diced fire roasted tomatoes and their juices, 1 tablespoon Old Bay seasoning, 1 tablespoon olive oil, 2 teaspoons kosher salt, 1/4 teaspoon freshly ground black pepper, and 4 cups water in a 3 1/2-quart straight sided skillet or Dutch oven. Bring to a boil over high heat.
2. Boil, stirring frequently so that the orzo doesn’t stick, about 8 minutes. Add 1 pound raw large peeled and deveined shrimp and cook until the orzo is al dente and the shrimp are cooked through and opaque, about 2 minutes more. Sprinkle each serving with oregano.
🍴🍲 Continuing my one-pot recipes for back-to-school! I took the original recipe and changed it up a bit. I used Old Bay seasoning that I already had in the cabinet - the original called for salt-free cajun spice blend. If I had to do this recipe again I would use fresh oregano or a lighter dose of oregano spice. Again, this was such an easy clean up!

🌱🍽️ Easy Dinner Idea!!
One Pot Recipe: Broccolini, Chicken Sausage, and Orzo 🥦🍲
📚 Between back to school, soccer and baseball practice I’ve been looking for easy, but delicious recipes for dinner. I fell down the rabbit hole of “one pot” recipes and found some good ones! My first up has veggies, it’s tasty and has the easiest clean up since it’s all made in one pot! Let me know if you try it!
🥘 One Pot Recipe: Broccolini, Chicken Sausage, and Orzo 🥘
INGREDIENTS
* 2 tablespoons olive oil
* 8 ounces fully cooked hot Italian chicken sausage, cut into 1/4-inch-thick rounds
* 2 bunches broccolini (about 1 pound), coarsely chopped
* Kosher salt
* Freshly ground black pepper
* 2 cloves garlic, minced
* 1 cup orzo pasta
* 2 1/2 cups low-sodium chicken broth
* 1/2 cup grated Parmesan, plus more for serving
INSTRUCTIONS
1. Heat the oil in a 10-inch regular or cast iron skillet over medium-high heat. Add the sausage and cook until evenly browned on both sides, 3 to 4 minutes. Add the broccolini & sauté until vibrant green and almost tender, about 5 minutes. Add the garlic & orzo, sauté about 1 minute.
2. Add the chicken broth and bring the mixture to a boil. Cover, reduce to a simmer, and cook until the pasta is al dente and the liquid is absorbed, about 10 minutes or according to your orzo's package instructions. (If the pasta is cooked before the liquid is completely absorbed, uncover the skillet and let it simmer for an extra minute to evaporate it.) Stir in the 1/2 cup of Parmesan and season as needed with salt and pepper. Garnish with additional grated cheese.
