Late post!
I started the 75 Hard ♠️ February 5th and completed April 20th, Easter Sunday. It was HARD this go around. There were so many things that came up in my life during this challenge that tested me to give up and quit.
There were many nights that I was finishing my outdoor workout super late. I was having to get up extra early to get things in because I did not know what would unexpectedly come up in my day.
giving up was not an option!
I found out a lot about myself during those 75 days. I have continued my two workouts a day, no alcohol, reading and other than a few cheat meals, my diet is still on track. I lost a total of 11 pounds but I gained so much more mentally, emotionally and spiritually. Will I do itagain….. absolutely!!!

BIG MAC SALAD

For the Salad:

4 cups iceberg lettuce chopped
1 Tbsp olive oil
10 oz vegan ground beef
2 cloves garlic, pressed
1 tsp paprika
2 tomatoes, chopped
5 oz vegan cheddar, chopped
1/2 cup pickles, chopped
1/2 cup onions, chopped
1/4 cup sesame seeds
Salt, pepper to taste
For the Sauce

1 cup vegan mayo
1 tsp garlic powder
1/2 tsp onion powder
1 tsp mustard
4 Tbsp ketchup
salt, pepper to taste

Instructions
In a pan, heat olive oil and add vegan ground beef. Season with garlic, paprika and a pinch salt and pepper. Fry for around 4 minutes until it starts to brown.
In the meantime make the sauce: in a bowl combine mayo, mustard, garlic, onion powder and ketchup. Add a pinch of salt and pepper. Mix and set aside.
Now for assembling: combine lettuce with tomatoes, vegan beef crumbles, cheddar, onions, pickles, sesame seeds, plus the dressing.

What is the theory behind the Paleo diet?
I tried it for 5 weeks for health reasons. The Paleo diet helps reduce inflammation in the body. Our bodies haven’t had time to evolve to properly digest the modernized food most people now eat: highly processed and refined foods such as seed and vegetables oils, processed foods, and added sugars that are part of the majority. These foods trigger inflammation in the body and cites this inflammation as the root cause for most of today’s major health issues like obesity, diabetes, heart disease, and even autoimmune conditions.

The Paleo diet is an attempt to mimic what was eaten in the Paleolithic Age: It focuses on animal proteins like fish, shellfish, meat, poultry, and eggs (preferably organic, local, and grass-fed to limit chemical intake); natural fats sources like nuts and seeds, avocados, grass fed butter and oils like coconut, olive, and flaxseed; and nutrient-dense produce.

The list of foods to avoid is a bit longer: Legumes (such as beans, peas, and lentils, as well as peanuts), grains, dairy products, potatoes, and alcohol, as well as processed foods and foods that contain refined vegetable oils or added sugars, are excluded from the diet. The diet favors natural, less refined sweeteners like honey, coconut sugar, and organic, maple syrup,
Similarly, if you choose to drink alcohol on occasion, wine (which is less processed) is considered more Paleo-friendly.

After 5 weeks of following the diet I have to say I do feel much better. Special thanks to .land for guiding me through this. Remember the 80/20 rule. Enjoy life and the foods you love in moderation. 🍕🍷🌮
