Let’s achieve the best version of ourselves!!:) “Be the change you want to see in the world”
Use overly ripe avocados instead of tossing them.
Blend these Ingredients:
✅ 1/2 cup Milk of choice
✅1 TBSP of ground up chia seeds
✅1 frozen banana
✅ sweetener of choice (coconut sugar, stevia, nunaturals stevia, etc.)
✅ 1/3 cup cocoa powder
✅ 1/2 teaspoon of vanilla extract
✅ 2 TBSP of coconut oil
✅ 2 TBSP of honey
✅ 2 extra ripe avocados
Let it chill in the fridge for 30 mins or more after blending. Then enjoy with your favorite toppings (fresh fruit, nuts, coconut shreds, cinnamon)
I’m not much of a fan of chocolate but my girlfriend LOVED the strawberries dipped in there the best.
Ingredients:
1 egg
1/4 cup coconut oil melted
1/3 cup pure maple syrup
1/4 tsp lemon extract
1 tsp pure vanilla extract
1 cup almond flour
1/4 tsp salt
1/4 cup + 1 Tbsp coconut flour
1/4 tsp baking soda
Jam:
6oz of any berries you have on hand
1 TBSP of chia seeds
2 TBSP of maple syrup
Steps:
1. Preheat your oven to 350 degrees and line a baking sheet with parchment paper.
2. Mix together dry ingredients. In a separate bowl, whisk together the egg or eggs, maple syrup, coconut oil and extracts. Stir the dry ingredients into the wet until a sticky dough forms. Chill dough in the refrigerator for at least 30 mins. We left ours overnight since we got sleepy. Made them the next evening!
3. Make the jam: heat the berries, syrup, and chia seeds on medium heat in a sauce pan until they are fully combined. You can then turn off the heat and place this to the side.
4. Roll dough into approx. 12 balls and place on baking sheet. Press your thumb or a 1/2 tsp in the center of each ball, then spoon 1/2 tsp (or more 😝) of the jam into each.
4. Bake for 10-12 mins. The top of the cookie will turn slightly light brown. They do not need to get dark to be “done”. Watch the bottoms! Those will get darker sooner than the tops.
5. Allow to cool (or don’t). Enjoy!
P.S - extra jam can be stored and used on breads or other foods another day :}
