If you're looking for ways to cut down on carbs or include more vegetables in your diet, you'll love this recipe for Savory Spaghetti Squash Boats:
Start by baking a halved, seeded 4-pound spaghetti squash at 375ยฐ for 30-40 minutes. Meanwhile, cook 1/4 pound ground beef with onion, green pepper, mushrooms, garlic, basil, oregano, salt, and pepper, adding diced tomatoes towards the end. Combine the cooked beef mixture with the scooped squash flesh. Refill the squash shells with this mixture and bake at 350ยฐ for 15 minutes, then top with mozzarella and bake for another 5 minutes. Optional: garnish with fresh basil. Enjoy a twist on classic spaghetti with these stuffed squash boats!
