Crispy Coconut Chicken with Mango Salsa
🥥🍗 Crispy, golden coconut-crusted chicken paired with a refreshing mango salsa—perfect for a tropical, flavorful dinner! 😍✨
Ingredients:
For the chicken:
2 boneless, skinless chicken breasts
1/2 cup flour
1 egg, beaten
1 cup shredded coconut
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil (for frying)
For the mango salsa:
1 ripe mango, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 tablespoon lime juice
1/2 teaspoon chili flakes (optional)
Salt to taste
Instructions:
Preheat a skillet with olive oil over medium heat (3 minutes).
For the chicken, coat each chicken breast first in flour, then in beaten egg, and finally in shredded coconut, pressing lightly to adhere (5 minutes).
Fry the chicken in the skillet for 5-7 minutes per side, until golden brown and cooked through (14 minutes).
While the chicken cooks, prepare the mango salsa by mixing mango, red onion, cilantro, lime juice, chili flakes, and salt in a bowl (5 minutes).
Serve the crispy coconut chicken topped with the mango salsa (2 minutes).
