High-protein egg & veggie bake. An all-in-one breakfast.

I made up this skillet dinner last night, with ground turkey and all the vegetables I craved. It served a whole table (with second helpings and no leftovers 🤭) and the nicest part is, it can be cooked and served right from the skillet.

Turkey and Vegetable Skillet 🍳

16 oz ground turkey
12 oz carrots, chopped
1 red bell pepper, chopped
½ yellow onion, chopped
8 oz kale, chopped
8 oz mushrooms, sliced
3 cloves garlic, chopped fine
1 tbsp evoo
2 tbsp apple cider vinegar
1-2 tsp honey
1 tbsp Italian seasoning
Salt to taste
Parsley for garnish

1. To heated skillet, add turkey, garlic, olive oil, apple cider vinegar, honey, Italian seasoning, salt. Break up with a spatula and stir to cook evenly.
2. When turkey is half cooked, add peppers, mushrooms, onions.
3. Steam carrots in a microwaveable bowl with a few tbsp of water, ~5 minutes or until tender. Add to skillet with turkey and other vegetables.
4. Add kale, set heat to medium and cook mixture until no liquid remains, vegetables are tender, and ingredients are lightly browned.
5. Top skillet with fresh parsley and serve.

Egg and lentil breakfast tacos 🌮🫘

Date brownies.

1 cup dates, pitted
3 eggs
1/3 cup honey
1/4 cup butter, melted
1 tsp vanilla
1 cup almond flour
1/2 cup cocoa powder
1/2 tsp baking soda
1/4 tsp salt
Chocolate chips

Pulse dates in food processor or high speed blender until a paste forms (if dates are too dry add 1 tbsp water at a time until they blend). Pulse all remaining wet ingredients until fully incorporated, then add dry and mix until smooth. Spread into an 8x8 pan, top with chocolate chips, and bake at 350° for about 30 minutes.

Chocolate turtles 🐢

I had a lot of medjool dates in the pantry. I wanted to try making date caramel, but then I had the idea to turn that into nostalgic caramel turtle candies.

Ingredients:
- about 20 large dates, pitted
- pecan halves
- chocolate bar of choice
- maldon or flaky sea salt

Put dates in a bowl, pour one tbsp of warm water over them at a time and smash vigorously with a fork/your hand until they are a sticky paste. Add a pinch of salt and mix again. Refrigerate.

Arrange sets of four pecans in a cross shape on wax paper.

When date dough is chilled, roll into tablespoon-sized balls and press over pecans.

Melt chocolate bar and spoon over caramel balls.

Sprinkle with more sea salt.

Refrigerate/freeze til chocolate is set, and serve!
