Rainbow breakfast skillet.
🌈 Serves 2 adults and 1 kid or 1 adult and 3 kids.
🌈 Sauté 1 orange bell pepper and 1/4 white onion for 3 minutes over medium heat, add 1 chopped tomato, sauté another 2 minutes. Stir occasionally. Season with taco seasoning to taste. Stir.
🌈 Reduce heat to medium-low, crack 5 eggs over the top and loosely cover with foil. Cook over medium-low heat until eggs are cooked through.
🌈 Enjoy over greens. Serve with toast, salsa and shredded cheese if desired.

Schedule some pockets of time for yourself each day.
For me, it looks like this cup of coffee this morning. I am an early riser so I try my best to get a small pocket of time for myself in the morning before the kids wake up.
Not a morning person? No problem! Even just half an hour to yourself after the kids go to sleep can do wonders for your well being. Relax with a cup of herbal tea, have some quiet.
Do what you need to do FOR YOU.
It is so easy to get wrapped up in doing everything for everyone else that we often forget about ourselves.

Trying to keep it together over holiday break?

25 minute dinner for a family of 5.
1 pack (about 10 links) all natural fully cooked chicken sausage
5 zucchini
1/2 onion
5 cloves of garlic
Sauté garlic and onion, add zucchini, cook until tender. Slice sausage while the zucchini is cooking. Add sausage, cook until heated through. Season with salt, pepper and oregano to taste
Serve with pasta and salad if desired

Your morning sets the tone for the rest of your day.
A morning ritual can be a saving grace. My morning ritual is waking up early, preferably an hour before everyone else, having a quiet cup of coffee and getting a workout in.
A holistic approach to wellness is the most fulfilling and will produce the most long lasting results.
One way to help your day start off and continue on a positive note is to set your intention for the day. Read it. Say it. Repeat it.
Let this daily mantra guide your day. If you eat well and exercise but neglect your soul you will not get your best results.
Mindfully setting my intention for the day in the morning is a habit I am working on establishing.

Prep smoothie bags on Sunday night for fast and healthy weekday breakfasts. I filled bags with a handful of spinach, half a banana and a handful of berries each. Pop in the freezer. In the morning, blend with a cup of almond milk and a scoop of shakeology for a creamy, delicious and healthy breakfast.
