Lisa May, owner of The Strength Code Palm Desert, began her training years ago at The Strength Code Toluca Lake, after starting to scuba dive. She discovered that the gear was really quite heavy and knew she needed to get stronger. She started high intensity weight training, and now, when she and her fiancé go scuba diving, carrying the tank is not an issue! Those great results inspired her to become a certified high intensity trainer, and she opened The Strength Code in Palm Desert 3 years ago so she could help others continue to do the things they love to do.

Meal prep with trainer Ann! 💜✨

Lemon Chicken With Capers:

4 to 6 boneless skinless chicken breasts
4 to 6 garlic cloves
1 medium or large lemon
1⁄2 cup of extra virgin olive oil
2 Tbsp capers, drained
1 Tbsp dried Italian herbs (sold as a blend)
Kosher or sea salt to taste
Fresh ground pepper to taste
Preheat oven to 350 degrees. Arrange chicken breasts in a large glass baking dish (9 X 13 or larger, if needed).
Mince garlic and add to a medium sized glass mixing bowl. Zest the entire lemon and mince the zest.
Juice the entire lemon over a strainer to keep out the seeds. Add zest and juice to the garlic in the mixing bowl.
Whisk in the olive oil until emulsified with the lemon juice. Add dried herbs and capers, mix thoroughly.
Spoon the olive oil mixture over each chicken breast as evenly as possible until all mixture is distributed evenly.
Shift each breast around so that the bottom surface of each breast is somewhat coated with the olive oil mixture.
Add salt and pepper to taste. Bake uncovered at 350 degrees for 30 to 40 minutes or until the inner temperature of the chicken is 165 degrees.
Serve the breasts with a few spoonfuls of the cooked marinade and your favorite side dishes. 💜

Try Something New:⁣
