Poached eggs & avocado kinda morning.
This is something I could do every day for eternity. Sliced avocado, pasture raised egg, Bulgarian feta, micro greens, all on Trader Joe’s 3 net carb Norwegian crispbread cracker.
So good. So filling. So easy.
Here’s how I layer it up:
1. Start with your favorite lowcarb cracker. I used the Trader Joe’s Norwegian crispbread.
2.Add a base of cheese. I used Bulgarian feta. Adds a perfect level of creaminess and saltiness. You can use another salty cheese or labneh if you like.
3. Add some 🥑. Slice it, dice it, mash it. You do you.
4. Add an egg. I poached mine.
- To make the poached eggs, crack an egg onto a handheld tea mesh strainer and let the excess liquidy whites fall out into a smaller bowl.
-once that’s done, gently slide egg in a small bowl / cup and set aside.
-Bring a put of water to a boil. Once its bubbly, put it on low heat, once it’s calmer, add 1/2 tablespoon of apple c***r vinegar (or any vinegar… you won’t taste it)
-With a spoon, create a swirl in the water (called the vortex) and then gently slide your eggs into the water from each bowl. Set time for 2 minutes for a runny yolk.
- Remove the egg with a spoon and dab onto a towel, then put on your plate or cracker.
5. I topped it alll with some fresh radish micro greens, ghost chili flakes (🔥), sea salt, and devoured.
Make it a good weekend 👊🏼👊🏼
