Pulled Goose Leg Sandwich for National BBQ Day, with Luke Clark ().
Ingredients:
6 Canada Goose leg quarters �(from 3 birds)
Salt (to taste)
1 Teaspoon black pepper
Approx. 2 Tablespoons olive oil
Approx. 2 Cups beef broth
1 Tablespoon ground cumin
1 Tablespoon garlic powder
1 Tablespoon onion powder
1 Tablespoon brown sugar
1 Cup BBQ sauce �(I like something sweet)
______
Instructions:
1. Pat the goose leg quarters dry then season with salt and black pepper.
2. Heat a cast iron skillet over medium-high heat and add olive oil to the pan.
3. Sear the goose in the skillet for about 2 to 3 minutes per side.
4. Transfer goose to your crockpot and add beef broth, cumin, garlic powder, onion powder, brown sugar, and 1/2 cup BBQ sauce. Cover and cook on low for 8 to 10 hours. Don’t rush it, the lower and slower you can cook these, the better they will turn out. The goose is done when cooked through to an internal temperature of 165°F and is easy to shred.
5. Remove goose to a cutting board and shred with a fork. Discard the bones. Place shredded goose back in the crockpot with the remaining 1/2 cup of BBQ sauce. Stir to coat with the sauce.
6. Serve on a bun with a slice of melted provolone and pickled onions, then pair it with your favorite sides and enjoy!
