Mexican Ground Beef & Cheese Quesadilla
Ingredients:
* 500 g ground beef
* 1 bell pepper
* 1 can of corn
* 1 can of beans
* 1 can of tomato paste
* 1 medium onion
* 3 cloves of garlic
* 1 tomato
* Fresh cilantro
* Seasonings of your choice
* Shredded cheese
* Flour tortillas
Instructions:
1. Finely chop the onion, tomato, and bell pepper.
2. Heat a pan and sauté the onion. Add the minced garlic and cook for a minute.
3. Add the chopped tomato and bell pepper and sauté everything together.
4. Add the ground beef and cook until browned.
5. Add the beans, corn, and tomato paste.
6. Season with your favorite spices and mix everything well.
7. Let the filling simmer over medium heat until all the flavors come together.
8. Meanwhile, grate the cheese.
9. Transfer the finished beef filling to a bowl.
10. Heat a dry skillet over medium heat and place a tortilla in it.
11. Add the ground beef filling to one half of the tortilla and top with plenty of shredded cheese.
12. Fold the tortilla in half and cook on both sides until golden and crispy and the cheese is melted.
13. Repeat with the remaining tortillas and filling.
And that’s it — an absolutely delicious, cheesy Mexican quesadilla! 🌮🧀

Figs Galette No-added sugar🍃
A naturally sweet galette made with fresh figs—no added sugar needed.
Ingredients
For the dough:
* 350 g cottage cheese
* 200 g all-purpose flour
* 1 egg
* 1 packet (about 8 g) vanilla sugar-free flavoring or vanillin
For the filling:
* 500 g fresh figs (about 6 large figs)
* 1 tsp cornstarch
Instructions
1. Preheat your oven to 200°C (392°F).
2. In a large bowl, combine the cottage cheese, flour, egg, and vanillin. Mix until a soft dough forms.
3. Wash and slice the figs.
4. Roll the dough into a large circle on a lightly floured surface.
5. Transfer the dough to a baking tray lined with parchment paper.
6. Sprinkle 1 teaspoon of cornstarch in the center of the dough, leaving a 5 cm (2-inch) border around the edges.
7. Arrange the sliced figs on top of the cornstarch. (You can substitute any fruit you love, but fresh figs are my favorite!)
8. Fold the edges of the dough over the filling to create rustic borders.
9. Bake for 30 minutes at 200°C (392°F), or until the crust is golden.
Enjoy warm or let it cool slightly before serving!
