"D-Day was the name given to the June 6, 1944, invasion of the beaches at Normandy in northern France by troops from the United States, Canada, the United Kingdom and other countries during World War II. France at the time was occupied by the armies of N**i Germany, and the amphibious assault—codenamed Operation Overlord—landed some 156,000 Allied soldiers on the beaches of Normandy by the end of the day.

Despite their success, some 4,000 Allied troops were killed by German soldiers defending the beaches. At the time, the D-Day invasion was the largest naval, air and land operation in history, and within a few days about 326,000 troops, more than 50,000 vehicles and some 100,000 tons of equipment had landed. By August 1944, all of northern France had been liberated, and in spring of 1945 the Allies had defeated the Germans. Historians often refer to D-Day as the beginning of the end of World War II."

😋When you think “celery” you probably think of it as an ingredient in other recipes – or notice it’s usually left over in a veggie platter.

This recipe will definitely have you rethinking celery because it’s a serious flavor bomb!

A couple of tips: the quality of the broth plays a big role in the flavor of this recipe. If you have homemade broth, it’s definitely worth using.

Beef broth is the classic braising liquid for this recipe, but feel free to experiment!

Amazing Braised Celery
(serves 4)

- 8 stalks of celery, rinsed and trimmed
- 1 Tbsp grass-fed butter
- Pinch sea salt
- Pinch freshly ground black pepper
- ½ cup (120 ml) beef or vegetable broth

If the outer stalks of your celery are tough or fibrous, peel them with a vegetable peeler. Then, slice the stalks diagonally into 1-inch pieces.

Melt the butter in a medium saute pan over medium heat. Add the celery, salt, and pepper and cook until it begins to soften (about 5 minutes).

Add the broth. Stir, cover, and reduce heat to low. Let cook for about 5 minutes, until the celery is tender but before it turns mushy. Remove the cover and let cook another 5-7 minutes so that the broth can reduce into a glaze.

Serve and enjoy!

💡THURSDAY TIP TO REDUCE DOC VISITS?

✍️Journaling can help you feel better, physically and mentally.

It can be a great way to deal with stress and uncomfortable situations even if you’ve never tried journaling before.

In one study, people who journaled had the biggest reduction in symptoms like depression, anxiety, and hostility, particularly if they were very distressed to begin with.

Plus, other studies have found that people who journal their thoughts and feelings make fewer doctor visits over the next six months! Pretty incredible.

⭐️There’s no “right” or “wrong” way to do it — although some research shows that if you write your THOUGHTS about a situation in addition to your FEELINGS, it can be more effective.

PSST: Did you know there’s a veggie at the grocery store used by ancient Greeks as an aphrodisiac that warded off hangovers? 😳

(Sorry, it doesn’t work for either.)

It was so important that they often used its flowers in wreaths that were given as rewards for athletes.💪

But, today you’ll usually find this veggie in crudités platters.

💚It’s CELERY!

Nowadays when we think of celery, it’s as a low-calorie “diet” food … but it actually contains a lot of good-for-you nutrients.

It has at least 15 different kinds of antioxidants and 25 anti-inflammatory compounds.

It's high in fiber (which means it’s good for digestive health) … plus it contains vitamins A, K, and C and is a good source of folate, potassium, and magnesium.

✅Because it’s so nutrient-dense – delivering many micronutrients in very few calories – it definitely is worth keeping on hand for a quick crunchy snack or ingredient in your other dishes.
