Day 7: The Foil-Wrapped Flavor Bombs You Didn’t Know You Needed 💥 WE DONT COOK WITH ALUMINUM FOIL OFTEN! You can also use parchment paper or any other oven safe bakeware.

Who says dinner has to mean dirtying every dish you own? These cajun chicken and veggie foil packs are the oven-to-table MVPs this weekend. Juicy chicken, tender veggies, and bold flavors—all bundled up like little presents. 🎁 Bonus? Cleanup is basically non-existent (you’re welcome).

It’s easy, healthy, and fancy-looking enough to make you feel like you’ve got it all together. Because you do.

🫶 Save this for the next time you’re not in the mood to wash dishes (which is…always).

Here's the full recipe...

What you'll need:

4 boneless, skinless chicken breasts, diced
3 cups broccoli florets
1 red bell pepper, cut into strips or diced
1 green beller pepper, cut into strips or diced
1 yellow bell pepper, cut into strips or diced
2-3  potatoes, diced 
1 onion, cut into strips or diced
2 tbsp olive oil/ Cajun Lux Butter @luxfamilykitchen
2 tsp garlic powder 
2 tsp onion powder
1 tsp smoked paprika
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper, to taste

What to do:

1. Preheat your oven to 400
2. Cut 4 large pieces of aluminum foil, about 12x12 inches each.
3. In a small bowl, mix the garlic powder, onion powder, smoked paprika, thyme, rosemary, salt, and pepper.
4. Drizzle olive oil over (or add butter) to the chicken breasts and rub with half the seasoning mix.
5. Toss all the vegetables in a large bowl with the remaining seasoning and a little extra olive oil if needed.
6. Place a diced chicken on one side of foil sheet and arrange  veggies on the other side (I try to add more veggies than chicken)
7.  Seal foil tightly to create a packet.
8. Place the foil packs on a baking sheet and bake for 35-40 minutes, or until the chicken is cooked through & potatoes are tender
9. Carefully open the packs (watch out for steam!), garnish with parsley, and serve directly from the foil for easy cleanup.
