Tuna & Egg Salad

When I was first introduced to this tuna salad I thought I would hate it, but I was pleasantly surprised by how much I loved it. If there is anything more that you would like to add to your tuna salad, please do.

After making this on camera, the next day, I added some bread and butter pickles so please do the same.

Enjoy!

2 cans of solid albacore
Onion
3 hard-boiled eggs. Chopped

Sauce:
1/2 cup non-fat plain Greek yogurt
1/4 cup mayonnaise (must be Best Foods)
Salt/pepper to taste
Chopped bread and butter pickles

Eat with Scoopers from Trader Joe’s.

Today’s recipe….High Protein Corn Wrap

1 can of drained corn
2 eggs
1/3 cup mozzerella
Salt/pepper

My filling but you can fill with whatever you like;

Cooked ground chicken breast
Spinach with garlic

Option to add cheese and/or herbs of your choice; I added cheese after the fact.

Combine the corn, eggs, cheese, salt/pepper in a bowl and mix. Spread onto a greased parchment-lined sheet pan and back for 20 minutes at 350. Turn your broiler on and get the corn toasty and crunchy.

When assembling your wrap, have the corn side of the wrap facing down and build from there.

50 grams of protein!

But do you know what menopause is?

Menopause is something that happens to every person with ovaries yet there is still so much confusion about what it actually is and how it impacts a woman’s life.

It’s time to learn the truth.

There are four stages of menopause that a woman goes through during her life:

1. Pre-menopause - when you get your period and enter into the time when you can become pregnant; have monthly periods
2. Perimenopause - marked by the disruption of your period and signals changes hormone levels (reduction in estrogen production by the ovaries); can experience a variety of symptoms of these decreasing hormone levels
3. Menopause - the one year period of time between when your final period occurs, and it is confirmed 12 months later
4. Post-menopause - after menopause is confirmed, it is the rest of a woman’s life

Due to these various stages, what used to be referred to as “menopause” is now being termed “the menopause transition”.

Important fact….symptoms of perimenopause (hot flashes, joint pain, weight gain, difficulty losing weight, belly fat accumulation, cognitive issues) can be present years into post menopause.

Why am I, an emotional eating coach who helps midlife women address their emotions/thoughts that are contributing to their weight gain, talking about this? Because the physical, mental, and emotional issues that I help women address to help them lose weight, are directly impacted by the loss of estrogen that naturally occurs during menopause, and it is a key component to me helping my clients understand what is happening to their bodies and what they can do to feel and look their best.

Exercise has always been a central part of my life. But as a menopausal woman, it now plays a very different role.

It used to be about weight loss, staying “toned,” or heart health. Now the focus has shifted to three things that matter more:

1️⃣ Protecting my bones — reducing fracture risk if I fall
2️⃣ Maintaining muscle mass — to keep my metabolism strong and blood sugar stable
3️⃣ Supporting my mind — better mood, deeper sleep, and more resilience under stress

Exercise matters at every age, but in this season it becomes essential to how we feel day to day.

Start small. A 10-minute walk after dinner is a great place to begin.

Movement isn’t a phase — it’s a habit you want with you for life.

40+ years of friendship, and when we are together it is like no time has passed. Laughter comes easily, and often, and there is just something so comforting about being around people who know you at your core. Thank you for being in my life and let’s make San Diego happen.

I’m back at it again….another recipe that will last me for at least 3-4 meals. And it is delicious!

The amounts of some ingredients are to your liking.

Chicken Salad

1 Shredded Chicken breast (I used the new product from Trader Joe’s)
Chopped celery
Chopped onion
Shredded carrots
Chopped pecans

Sauce:

1/4 cup non-fat plain Greek yogurt
3 tbsp mayo
1 tbsp each fresh parsley and dill (if you have dried, use less)
2-3 tbsp grated parmesan cheese
1 tsp, dijon mustard
Salt/pepper to taste
Garlic powder and onion powder to taste

Combine the salad and sauce together and be sure it is moist. I love eating this salad with Trader Joe’s Dippers (similar to Scoops).
