If you get the chance to try a T burger it won’t disappoint!! Best burger in Michigan!!
Open Saturdays 11am-5pm at the Davison Farmers Market
The process starts Monday with putting in the meat order from K**b Hill Meats they grind our special mix (brisket, Short rib, sirloin) every Saturday morning right before we open. Late Thursday night after a hard day of work Candela's Cannolis and More (my mother) Maria Church starts the dough for the buns, made with left over potatoes Penzien's Produce that didn't end up french fries, and eggs from our chickens that get fed the left over produce from the day at the market. Early Saturday morning we finish cutting the dough (something I've been doing for 30 years, my first job was cutting pizza dough for Bruno Vallecorsa) and we bake the buns fresh and pop them in the warming/holding oven to maintain that fresh out of the oven taste. While we finish baking the buns the crew is processing the produce to perfection, everything hand picked from our Davison Farmers Market
Once all the produce is processed, we start with avocado oil on the flat top to sauté our onions to a perfect caramelization, salt and pepper to taste.
Hand picked to perfection potatoes from Penzein's Produce is the start of our fries, they are cleaned, pressed into a 1/4in shoestring fry and dropped into a salt brine, then tossed into the large commercial salad spinner to pull off any remaining water the salt didn't pull out, we start with a blanch fry to steam out any left over water, then finish with a second searing fry to desired crispness /color, after pulling the fries and dumping them in the warming fry basket they are immediately salted to perfection.
Back to the T Burger, while a pre weighed 4.3oz ball of meat is being pressed to a perfect 3/8"-1/2" the still warm bun from the oven is being cut for the first time and buttered with Kerrygold.
The patty is cooked 3/4 the way before flipped, adding to a prefect sear/ crust, sealing in all juices from the short rib visceral fat. Immediately salted to perfection and tossed on to the bun, immediately wrapped in foil to lock in heat and moisture.
This is our control burger, this is where we make sure everything is absolutely top notch!
How's the buns? Weigh, size, density, proof correctly, color, texture.
How's the meat? How's the fat content, the crust, the flavor
Does it have the perfect amount of salt? Too little makes it bland, too much is overwhelming.
At this point after every is a go, we are open and bring to you the world's greatest burger. A lot of restaurants say they have the best food but skip steps, no steps can be skipped, everything has to be perfection.
