Our current plan:
1. If there is a No Unnecessary Travel advisory in town, we will open the gym late. Time to be announced on the FB page.
2. If School is Cancled we will not have any classes.

Starting Nov 28th we are going to be trying something new!! We will have HOMEMADE BURRITOS available for sale!!!
They will be arriving to the gym on Monday's at 9am and sold on a first come first serve basis!!

Cranberry Salsa
SALSA
1 12-ounce package fresh cranberries
1 Granny Smith apple, peeled, cored, roughly chopped
1/2 red onion, peeled, roughly chopped
1/2 cup packed fresh cilantro
1/2 cup granulated sugar, more or less to taste
2 tablespoons lime juice
1 4 ounce can diced green chilies
2-4 jalapenos, seeded, roughly chopped (reserve the seeds)
1 inch ginger, peeled, roughly chopped
1 teaspoon ground cumin
1/2 tsp EACH salt, pepper
FOR SERVING
2 blocks (16 ounces) cream cheese, softened
crackers, crostini or bread if serving with cream cheese
tortilla chips if serving plain
Instructions:
1. Combine all the Salsa ingredients in a food processor and process to desired consistency. Wait to adjust to taste until ready to serve.
2. Chill for at least 30 minutes or until ready to serve (up to one week) to let the cranberries macerate in the sugar (they will become less tart).
3. When ready to serve, drain off excess liquid. The flavors will mellow and the salsa will become less tart the longer it is chilled so be prepared to do some jazzing up. Add additional sugar if your cranberries are extra tart or if you would like the salsa less tangy. Add additional lime juice for tangier, jalapeno seeds or red pepper flakes for spicier and/or salt and pepper for flavor.
4. To serve, place cream cheese on a plate and pour some of the drained salsa over top. You can also spread the cream cheese into an even layer in a dish then top with the salsa. Serve with crackers. The salsa can also be served plain with tortilla chips, or as a side to chicken, pork, turkey, salmon or steak.
Creamy Lemon Chicken and Asparagus Soup
Ingredients
1 lb chicken breast or tenders
3 tbsp avocado or olive oil divided
3 cloves garlic crushed
8 large asparagus stalks
2 14 oz cans full fat coconut milk
2-3 cups chicken broth
Juice of 1 lemon about 1/4 cup
1 tbsp. lemon zest
Salt and Pepper to taste
1/4 cup chopped fresh basil
Instructions
1. To prep this dish: chop your chicken breast or tenders into 1 inch chunks. Season with a bit of salt and pepper.
2. Heat a large soup pot to medium high heat, once hot add in 1 tbsp avocado or olive oil. Add chicken to the pot, and cook for about 3-4 minutes until all sides are lightly golden (chicken may be undercooked inside). Set aside.
3. While chicken is cooking, prepare your asparagus. Chop about 1/2 inch off each end. Slice the remaining stalk in 1 inch pieces.
4. Add in another tbsp oil to the soup pot, toss in garlic and asparagus. Cook for 8-10 minutes or until asparagus is crispy. Toss chicken back into the pot.
5. Add coconut milk and 2 cups broth to the pot. Check to see level of liquid, if you prefer a more liquid soup, add in an additional 1/2-1 cup broth. Heat to a soft boil, then reduce to low. Let simmer for 5-7 minutes, stirring frequently and letting flavors meld.
6. Just before serving, add lemon juice and lemon zest to the pot. Season with salt and pepper. Place soup in individual bowls, garnish with fresh basil.

❤️Our second beneficiary for the TURKEY TROT! She is a kind and fierce member of our tribe! Miss Quinlynn Denelsbeck! Read her story, send some love and show up for the trot on Thanksgiving day! 🦃
❤️I had been receiving iron infusions several months, when one day the person administering my infusion got to looking at my lab results and started asking questions. She suggested I get a referral to an oncologist, my blood work mimicked leukemia. As I left that appointment I was thinking Leukemia yeah right? I am 24 years old. A single mom to a beautiful 4 year old daughter, a great job that I am good at! God certainly wouldn’t do that to me?
❤️After a long conversation with my family I called my regular Dr. And within two weeks I had an appointment with Rocky Mountain Oncology. My first appointment was easy, more blood work, a full body exam and was told they would see me next month. I left that appointment with not a worry at all. After all if I had cancer they would have seen it right? Not even a week later I received a call and the Dr wanted to see me that Friday morning. That’s when the fear and the denial set in.
Friday morning in August I was diagnosed with Chronic myeloid leukemia. CML is an uncommon type of cancer of the bone morrow and blood. Since my diagnosis I have gone in for many blood test, a bone marrow biopsy, and molecular testing at the Cancer center of America in Goodyear Arizona and Rocky Mountain Oncology in Casper.
❤️Without treatment the chronic phase can and will progress to the accelerated or blast phase. It has taken me a lot of self talk and convincing myself to see the reality of my diagnosis and the need to take care of myself for my mind, body and spirit over all else. I am now not able to return to the job I enjoyed due to the shift work.
I never take a single moment for granted. From the outside I don’t look like I have leukemia, but the struggles I endure everyday constantly remind me that I do. I will continue to take the magic pills I have been prescribed for the remainder of my life and manage all the side effects. I will never be in remission or get to ring the bell! This is a fight I will always have a commit to stand and fight till the day a cure is found.
❤️I feel an overwhelming sense of gratitude. I am grateful for the miracle pills that help save my life and let me continue to love on my 4 year old daughter , my family and friends here on earth. My daughter is the reason I fight this fight!
❤️Like with any chronic illness, it seems the days of strength and the days of fatigue are challenging and impossible to predict. So I will take small steps and big steps one day at a time.
The road may not be what I envisioned but I will embrace who i am and make the most of what I have and what I can do.
❤️I am grateful for the prayers of so many friends, family, and members of the community. It’s those prayers and thoughts that help me get through each day. You all give me strength to know I am not alone!! Thank you for the love and support! Lots of love from me and my family to you all😘
