The Converse Hope Center is so grateful for what the staff and patrons of Peak Fitness have done for our community.
These amazing boxes were delivered by Peak staff today, they will be distributed to those in need this Thanksgiving.

I will be at the fitness center by the river at 4:30 today if anyone wants to join for a workout! 🙂
I can bring eggs into the gym in the morning (Friday) for those that need eggs. I will be there around 8:00. Please let me know how many you would like and I'll try to make that happen. $3 a dozen.

I will be delivering 12 dozen fresh eggs to the gym in the morning (Wednesday, 24 June.) FCFS, $3.00 a dozen.

Recipe from one of our members

Chicken Zucchini Bake

Ingredients:
8 oz boneless chicken
4 oz fresh mushrooms
1 medium zucchini
2 Tbsp butter
Salt and fresh ground black pepper, to taste
2 cups shredded Italian cheese blend
1/2 cup sour cream
2 green onions
2 eggs (beaten)
2 tsp dried basil

Instructions:

1. Preheat the oven to 375 F. and spray 8x8 baking dish with non-stick spray.
2. Dice the chicken into bite-sized cubes.
3. Slice the green onions, mushrooms, and zucchini. Cut the zucchini slices into halves or quarters.
4. Melt the butter in a large pan on medium heat. Add the chicken, zucchini, mushrooms, salt and pepper to the frying pan. Cook and stir often, until tender, about 5 minutes. Drain in a colander.
5. Mix together the cheese, sour cream, green onions, beaten eggs, basil, salt, and black pepper, until well combined.
6. Stir in the chicken, zucchini and mushrooms until well coated.
7. Pour the chicken and cheese mixture into the two dishes, divided evenly. Bake 30-35 minutes. Allow to cool 5 minutes before serving.

Zucchini Quiche with Bacon and Hash Brown Crust

Ingredients for Hash Brown Crust:
3 cups refrigerated or frozen hash browns thawed, patted dry
2 tbsp extra virgin olive oil
2 tbsp unsalted butter melted

Ingredients for Quiche Filling:
1/2 lb bacon cooked, crumbled
1 shallot diced
1 medium zucchini
1/2 tsp salt
1/2 tsp black pepper
1/4 cup all purpose flour
1/2 tsp baking powder
1/2 tsp salt
5 eggs room temperature
1 cup plain Greek yogurt
3 cups shredded cheese (Sharp Cheddar, Monterey Jack, Pepper Jack - a combination of 2 or more works best)

Instructions:
1. Grate the zucchini onto a clean kitchen towel and squeeze dry, removing as much excess liquid as possible. Set aside.

Hash Brown Crust:
1. Preheat oven to 400F. Coat a 9-inch pie plate with non-stick cooking spray. Set aside.

2. In a medium bowl, combine, hash browns, olive oil, butter, salt, and pepper and toss to combine.

3. Press hash browns into the bottom and up the sides of the pie plate firmly, forming a crust. You want it to go all the way up the sides because it will shrink some while baking. Bake for 20 to 25 minutes or until the edges are golden brown.
Reduce oven temperature to 350F.

Quiche Filling:
1. Cook bacon in a large sauté pan over medium high heat until crispy, about 6 to 8 minutes on each side. Remove from skillet and crumble into small pieces.

2. Remove all but one tablespoon of the bacon grease from the skillet. Add the diced shallots and sauté over medium heat for 3 to 4 minutes or until translucent and soft.

3. Add shredded zucchini turn up the heat to high. Season with salt and pepper. Cook the zucchini and shallots for an additional 3 to 5 minutes, stirring occasionally.

4. Combine the flour, baking powder, and salt in a small bowl.
In a separate bowl, beat the eggs until nice and fluffy (2 to 3 minutes). Whisk in the Greek yogurt until combined and smooth.

5. Add in the grated cheese, flour mixture, bacon, and zucchini mixture and stir until combined.

6. Pour filling into hash brown crust and bake for 35 to 40 minutes or until center is set, the top is puffed and golden brown and a toothpick inserted into the center comes out clean. Let stand for several minutes before removing from pan and serving. Can also be eaten room temperature or chilled.

Labor Day Weekend there will be NO classes Saturday September 3rd through Monday September 5th. Classes will resume on Tuesday morning with spinning at 6am.

Grilled Huli Huli Chicken

Ingredients:

6 boneless skinless chicken thighs
1 cup pineapple juice (the juice from a 20 oz. can of pineapple slices)
1/2 cup soy sauce
1/2 cup ketchup
1/2 cup brown sugar
1/3 cup apple cider vinegar
1 tablespoon garlic (crushed or minced)
2 teaspoons grated fresh ginger

Directions:

1. Place chicken thighs in a gallon-sized Ziploc bag.
2. Combine remaining ingredients in a medium-sized bowl and whisk until sugar is dissolved.
3. Pour sauce into the bag over the chicken. Press air out of the bag and seal.
4. Marinate at least 2 hours and up to 20 hours.
5. Drain marinade into a medium-sized sauce pan and remove chicken to grill. Simmer sauce over medium heat while chicken is being grilled (about 15 minutes). Stir often. When sauce has thickened a little bit, remove from heat and set aside to cool.
6. Grill chicken for 5-7 minutes per side over medium heat. When internal temperature reaches 165-degrees, remove from heat and cover with foil for 3-5 minutes before serving.
7. Place chicken in a large serving bowl and pour sauce over the chicken, toss to cover in sauce.
8. Serve with pineapple slices and/or rice.
