Trying to eat more “anti-inflammatory foods doesn’t have to be boring. So many options for toppings including chickpeas, falafel balls, peppers, tomatoes, spinach and/or lettuce, cucumbers, beats, green onions, avocados, celery, seeds, carrots., feta cheese or whatever is leftover in your fridge . I keep a container of beats and falafel in the freezer. Eric tops his salad with Creamy ranch yogurt dressing and I prefer olive oil with balsamic vinegar
